Their work is always impressive, with fine attention to details and excellent fit and finish. It has long been our intention to offer their Wa Gyuto, Wa Santoku and a few other models, which all have a double beveled edge (50/50 symmetrically ground).
After a long wait, we are now pleased to announce our new Fu-Rin-Ka-Zan White Steel No.2 Series of high quality, traditionally forged knives. There are a total of 6 different types and sizes of blades available, and they are perfect for professionals who demand high cutting performance or lovers of high carbon steel. Their blades are made with a core of the very popular, high purity, Hitachi White Steel No2. Japanese high carbon steel, which is sandwiched between two layers of soft iron. The blades are carefully hand ground to create superb cutting geometry and they are beautifully hand polished. Indeed, the overall fit and finish of the knives is excellent.
