R-2 cutting edge core is sandwiched with soft stainless steel. R-2 is made by a highly reputable Japanese company Steel company called Kobelco, and the steel offers remarkable cutting performance and edge retention.
  We have worked with great forge-smith Sukenari again for making these knives. Both we and Master Hanaki (President of Sukenari) believes R-2 is one of most practical steel available in this generation. This knife is the simple appearance, yet we can feel the high level of craftsmanship and spirits from the specially forged fine Japanese Traditional Style knife.

This knife has a comfortable octagonal magnolia wood handle, which has a buffalo horn ferrule. For safekeeping, this knife comes with a matching magnolia wood Saya (Sheath) with a black pakkawood Saya pin.

The lightweight, double bevel edged Kiritsuke might be compared to a combination of the Nakiri and the Sujihiki. It is a very versatile knife that can be used to perform many of the tasks normally done with a Gyuto.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened  50/50 without problems.

Important

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    Amazing Bargain for a WORKHORSE SG2 Kiritsuke

    Researched a ton to find a somewhat affordable Kiritsuke with durability, sharpness and decent edge retention for an employee and came across this gem. For an SG2 blade with K-tip this knife is a STEAL! Holds it's edge almost as long as my Yoshihiro ZDP-189 210mm Kiritsuke, is sharp as a razor and much easier to sharpen. My employee loves this knife (and I find myself swiping it from her occasionally hehe). It's lightweight and handles like a dream - really enjoyable to use and highly recommended!

    Amazing Knife

    As someone who works in a professional kitchen, doing both prep and line work, I would highly recommend this knife with a few caveats. First off, I'd like to sing its' praises and comment on how nice the cutting feel is. It feels more like it's slipping through soft foods rather than slicing through them. With regular stropping I've been able to maintain a razor edge (I can actually shave with it) for about 2 weeks in between whetstone touch ups. The handle is very comfortable when held in a pinch grip on the blade. For professional usage, I would definitely recommend a longer blade, 240 or 270mm, depending on whether you're looking for a slicer or a more general purpose knife. I purchased the 210mm and often find myself running into issues with length, especially when chopping larger ingredients ie. hearts of romaine and cabbage. Though for home cooking, I would say that the 210 is your best bet for a workhorse that should last years if not decades.

    Good for professional chef

    Amazing for cut veggies, fish and sushi rolls. Even so sharp Be honestly u can using as a multitask. If u need unique knife? I recommend this knife
