Made using a very pure Swedish high carbon tool steel, each knife in the Misono Swedish Steel Series is very carefully hand-forged to create a masterpiece of "Hagane Hocho" that features excellent edge sharpness, very good edge retention and is easy to re-sharpen (HRc. 60).

Because Misono knives look like many other classic Western Chef’s knives, it often difficult for inexperienced users to discern the quality of their blades. To help us express the quality of Misono’s knives to our customers, we thought the opinion of a professional who has over half a century of experience in the knife industry and decades of experience in using and sharpening many different kinds of knife. He clearly stated that in his, unbiased opinion, Misosno’s Swedish Steel Series knives are the best carbon steel knives currently being made in Japan.

This knife feature full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and steel bolsters for extra durability and improved blade balance.

Misono produces proper blade grind angle and edge geometry for left handed version at following additional cost from regular one. Misono also puts logo on opposite side of blade to identify the left handed version. Please allow 2 business days for the left handed Misono knives to deliver. (Left Handed Version of Misono Sweden Steel Series Knives normally don't come with Flower or Dragon Engraving)

Generally, Japanese kitchen knives are designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. Misono produces 100% left handed version with suitable blade grind angle and edge geometry from the beginning process.

This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for a long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes. Please apply Tsubaki oil on the blade and keep it in a dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    Misono 210mm/8.25" Gyuoto/Chef's knife

    Received the knife very promptly from Japan - much faster than internal US mail would be. It was VERY sharp out of the box, but packaged reasonably, so no damage despite international shipping. There is a full tang through the handle, which has a nice wood look, and flush-finished brass rivets to keep it in place. The handle is also long and wide enough for my longer fingers. I researched these knives a lot before buying it, and found the Misono to have 2 things that others lacked, consistent quality, and a reasonable price. Other brands at 2 or 3 times the price seemed subject to a high level of inconsistency according to reviews, so handles shrink, blades are chipped and finishes pitted on arrival, etc. This Misono arrived perfect out of the box. The blade is thinner and lighter than the French chef’s knife I’m used to, but its sharpness makes it easy to use. I like the extra length as well, noting the blade is closer to 8.5" than the advertised 8.25". The knife’s curve isn’t pronounced, yet it’s enough to chop by swiveling it on its point, much like the French and German chef’s knives, especially the German ones. Again its sharpness helps with that despite less leverage due to less curve. I left the blade in apple cider vinegar for 2 days to give it a patina (basically “rusting” but without oxygen). This will help protect it going forward. In using it I can feel it’s more "brittle" than my French knife, so don’t use this on bone or similar hard items. But that’s okay, that’s not its purpose, so this is an observation, not a criticism. Having only had it for a short time, there’s little I can say about durability and longevity, e.g. I don't know if the handle shrinks from the blade over time, how the blade holds its edge, how easy it is to sharpen, etc., all of which are very important. But I’m being asked repeatedly for this review, so have decided to respond with what I can comment on now. If I'm able to comment when I've had it a year or so, I will update with that kind of information. To-date the knife seems light but well-balanced, whether for usage, workmanship or price. Hope this helps any other prospective buyer.

    Misono Sweden Steel Series Gyuto 180mm

    Good short gyuto. Sharp out of the box. Pretty asymmetric sharpening. Blade is rigid and gets a patina quickly. No real smell issue. Flower engraving is nice.
