Made using a very pure Swedish high carbon tool steel, each knife in the Misono Swedish Steel Series is very carefully hand-forged to create a masterpiece of "Hagane Hocho" that features excellent edge sharpness, very good edge retention and is easy to re-sharpen (HRc. 60).

Because Misono knives look like many other classic Western Chef’s knives, it often difficult for inexperienced users to discern the quality of their blades. To help us express the quality of Misono’s knives to our customers, we thought the opinion of a professional who has over half a century of experience in the knife industry and decades of experience in using and sharpening many different kinds of knife. He clearly stated that in his, unbiased opinion, Misosno’s Swedish Steel Series knives are the best carbon steel knives currently being made in Japan.

This knife feature full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and steel bolsters for extra durability and improved blade balance.

Misono produces proper blade grind angle and edge geometry for left handed version at following additional cost from regular one. Misono also puts logo on opposite side of blade to identify the left handed version. Please allow 2 business days for the left handed Misono knives to deliver. (Left Handed Version of Misono Sweden Steel Series Knives normally don't come with Flower or Dragon Engraving)

Generally, Japanese kitchen knives are designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. Misono produces 100% left handed version with suitable blade grind angle and edge geometry from the beginning process.

This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for a long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes. Please apply Tsubaki oil on the blade and keep it in a dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    Misono carbon steel gyutos improve greatly with steeper edge

    I am a professional chef in Sweden. First of all, give these blades a sharper angle on the face side and they improve greatly, A pro sharpener did it for me. I thought he had ruined my knives, but they cut like butter. Thank you. I keep them up on a 4000/1000 stone. For veggies, fruits, meats and fish I use carbon steel knives, even bread, but not hard bread crusts though. Soft summer veggies, hard root veggies, it does it all. The performance of carbon steel knives is better, at a lower price. They have more bite and therefore give mer confidence. I have Misono carbon steel gyutos from 210 to 300. They are are lasers, and cut through everything beautifully, with the steeper edge. After heavy use, product release improves and a unique patina develops. After honing on a 4000 stone the shiny metal is once again revealed on the edge They are durable. Easy to touch up or get razor sharp again for fine cutting of meat or fish. Each size has it´s areas of usage. I also have a couple carbon steel nakiris for veggie and fruit prep but the Misonos can do the job too. In a professional kitchen time is an issue so the nakiri is a great knife to have in addition to the Misonos. Great fit and finish. I also have the petty and the deba. Start with the 210 or 240 gyuto, have it sharpened steep asymmetrically by an experienced pro sharpener, and then add the 270 or 300 gyuto for cabbage and melons and larger amounts of produce in a pro kitchen.

    I'm far from being an expert on knives or sharpening, but the Misono Swedish Steel series have worked out extremely well for me. They are easy to sharpen, and stay sharp for a decent amount of time. The steel doesn't nick, and as long as the knife is dried after being cleaned, it won't rust very much. Removing the rust is also not too hard, though using buffing pads to clean will desharpen it. I haven't tried the rust eraser. I also find the knife well balanced with a comfortable handle. Unless carbon steel is a deal breaker for you, this series is one of the best values in knives I've seen. Also, service with JCK has always been fantastic. Great communication and fast inexpensive shipping, I highly recommend ordering from them.
