For your information, most of the Japanese Kitchen knives come originally with double bevel edge sharpened 70/30 (face side/back side) for Western style knives. This geometry came from Japanese Traditional knives with single bevel edge and Shinogi blade construction. This is one of the special features and reasons why Japanese knives have an excellent cutting performance.
However, this 70/30 edge geometry is designed for right hand use, so we have a service to modify it to 30/70 for left handed users with re-sharpening process by skilled craftsman.

I recently purchased the No. 8S 150mm and No. 9 180mm from JCK to complement a No. 10 210mm that I have had for the past two years. These are great knives with thin edges that work well for prepping meats and also for slicing after cooking. The 150mm was originally for my wife but she found the handle to be too small. I was able to contact JCK, who confirmed the 180mm has the same handle as the 210mm, which is the perfect size. Now the 210mm is my chef's knife, the 150mm is akin to a large petty, and the 180mm is my wife's chef's knife. A perfect trio for us!
Extremely Sharp, great balance, durable, and comfortable to hold. This knife was a birthday gift for a friend and I am probably going to buy myself one now.
Crazy sharp, flies through my vegetables work no effort. I’m hoping edge retention is as good as it was advertised. Recommended for bigger hands.
