Hammer Forged R-2 Special Steel Knives are just finished available.
R-2 cutting edge core is sandwiched with soft stainless steel. R-2 is made by a highly reputable Japanese company Steel company called Kobelco, and the steel offers remarkable cutting performance and edge retention.
We have worked with great forge-smith Sukenari again for making these knives. Both we and Master Hanaki (President of Sukenari) believes R-2 is one of most practical steel available in this generation. This knife is the simple appearance, yet we can feel the high level of craftsmanship and spirits from the specially forged fine Japanese Traditional Style knife.
This knife has a unique natural wooden texture of octagonal Bocote wood handle, which has a buffalo horn ferrule.(Sukenari carefully selects the Japan's Premium Wa Handle craftsman for handcrafting this premium wood Wa Handle). For safekeeping, this knife comes with a matching Black Lacquered Wood Saya (Sheath) with a black pakkawood Saya pin.
The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.
The JCK service was really good. The delivery was quick and troubleless. The knife itself is outstanding. It's a small piece art. It's a really nice piece of craftsmanship. It's easy to handle and to work with. It's a very sharp. The blade steel has very good retention. I have been using it for four months now. I haven't sharpened it yet. Just a little honing few times. P.S. It's a stainless steel knife. So, it's easier to take care of.
