A cutting edge of high carbon Hitachi Gingami No.3 that is welded forged with soft stainless steel for increased toughness and ease of re-sharpening.

Gingami No.3 is a high-grade Japanese stainless cutlery steel for the cutting performance and edge retention similar to high carbon steels, but improved resistance to corrosion.

This knife comes with a comfortable octagonal magnolia wood handle with black water buffalo horn ferrule / bolster, and includes a matching magnolia wood Saya (“Sheath”) -with black pakkawood saya pin- for safekeeping.

The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

Beautiful Craftsmenship

I was on the fence about which version to purchase. As a beginner, going with the single bevel was a risk; the better choice was a double bevel. In the end, I ended up challenging myself. I went with the single bevel. I received the double bevel santoku instead. The JCK team was extremely helpful and gave me the choice of the single or the double. I chose to keep the double bevel santoku. I have no doubts that both versions are beautiful. When I have more money, I will come back to purchase the single bevel version. I am extremely happy with the double bevel version, and have acquired another Fu-Rin-Ka-Zan knife that holds the same standards of craftsmanship. 100/10 will be purchasing again.

Very beautiful and perfectly balanced knife

Very beautiful and perfectly balanced knife. For th lefthanded version: I have always preferred single bevel knives- in fact it took me decades to realize, that all the knives I have are wrong way around for a lefthanded person like myself. Since then I was looking for a good ,lefthanded‘ knife and I am very happy now. After several visits at good stores (who in best case offered double bevel knives with asymmetric handles, calling it ,the lefthanded version‘) and uncountable hours in the internet I have finally got exactly what I wanted and for a very reasonable price. Toki Iwahara gave a perfect service, less than a week the parcel arrived. Very pleasent, satisfying shopping experience, Thank You!
