We are proud to introduce Mizuno Tanrenjo’s wonderful and beautiful Hamon layer of Honyaki Series (White Steel), which is heat-treated and to an incredible HRc. 64-65.
The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

Due to these difficult and unfortunate circumstances, we regret to inform our customers that Mizuno Tanrenjo is no longer able to accept requests for a specific color of Water Buffalo Horn Ferrule. This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
This knife comes with D Shaped Magnolia Wooden Handle. (Normally designed for right hand use). For the left handed version, we work with the maker for adjusting the handle location suitable for left hand use.

I have used this knife exclusively for the last three days, and sharpened it at the end of every day. I enjoy how this knife feels on my water stones and how easily it saturates the mud with metal. It holds a great edge. The mirror polish finish allows a pleasant grace period for drying to knife before needing a bit of hand polish. It's a very classy knife, but also cute and nimble.
I love how sharp this knife is but it did begin to turn rather quickly. I only used a scrub brush with dish soap to clean it. So, I’m not sure what I did to make it turn.

Comes with no cutting edge so might want to get it sharpened by JCK if want to use it right away.
