This beautiful traditional forged knife is called “Blue Moon”, which is青月Seigetsu” in Japanese. This is because we felt that the unique Tsuchime (“Hammered pattern”) dimples and dark-colored Kurouchi (“Black forged”) finish of the blade looked just like the cratered surface of the Moon.

The core of the blades is made from Hitachi Blue Steel No.2 Japanese high carbon steel, which is sandwiched between soft stainless steel for improved corrosion resistance, and thus reduced maintenance. Blue Moon Knife is hand ground and sharpened, and have very good overall fit and finish.

The oval-shaped handles are suitable for both right-handed and left-handed users. They are made of Chestnut wood with black resin ferrule.

The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes. Please apply Tsubaki oil on the blade and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Great Knife in very good quality for a perfect price

I love the Blue Moon knifes from JCK. They are sharp like **** and have great edge-retention. And the classic raw design is an absolute eye-catcher. Bought already two as a present for my brother and my best friend and both love them too. It's very good quality and and absolute Recommendation for starters.

Blue Moon Series from BM-1 to WA Petty and now BM-3

I was looking for something that have a little rustic look and are a tool that can be frequently used. Since I am carbon steel lover, reason it hold sharpness for a long time, and It’s easy to maintain. Problem with carbon steel is that the knives get rusty easily if you not take care of them. And I thing the Blue moon series is a good way to solve this problem. Next thing was that I was baying this as a present to a good friend of me. First the BM-1 and a year later the WA Petty. This because I get a god response from him. “Best knives he have used E The BM-1 was the fist one and not in perfect shape, but the edge was fixed with use of wet stone, a year later he get the WA Petty from me, it have a fine edge and was ready to use without maintenance. Quality of workmanship is going better and better. The BM-3 was the fist one I was ordering for my self, I have use it for about 3 weeks and I am happy with the quality of this knives, It’s sharp and easy to use, excellent to maintain and hold the edge in a sharp and good condition. Always after use I clean the knives and dry it before it is store on a magnetic list, no oil is used and after a long period of use, rust remains visible on the blade. Some small thing to mention: There should be done some more work to get better fitting between thee wood handle and the black resin ferrule. But overall, you get a excellent knives for the price.
