For the core steel of this Damascus knife, Master Craftsman Mr. Gotou selected a special Powdered Metallurgy High Speed Tool Steel called “R-2”, which he heat-treats to HRc. 63. R-2 is made by a highly reputable Japanese company called Kobelco, and the steel offers remarkable cutting performance and edge retention. The two outer layers of the blade are made from a unique and elegantly patterned Damascus steel, which is comprised of alternating layers of white-colored nickel steel and sparkling mirror polished layers of steel.
Mr. Gotoh decided to work in collaboration with a Master forge-smith, who uses traditional forge hammering techniques to exploit the best characteristics of the steel. The finishing work is then carried out by Master Gotoh’s reliable team of highly skilled craftsmen.
KAGAYAKI R-2 Damascus Series knife has an attractive and very durable Linen Micarta handle, which ensures a comfortable and secure grip. The knife also comes with a matching wooden Saya (Sheath) with a decorative black lacquer finish, which complements the appearance of the Micarta handle and Damascus blade very well.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Knife retains its edge very nicely and is well balanced. Easy enough to sharpen. Highly recommended for this price range.
As usual , from JCK, another excellent, elegant knife.
I spent some money on this knife, and I’m glad I did. But truth be told, as far as cutting performance is concerned I could have gotten the same slicing power from any knife selling for less than $100 at JCK. What my JCK Original Kagayaki R-2 Damascus Series KGR-1 Petty 150mm (5.9 inch, Forged Blade) got me was a blade that held it edge for a very long time, plus it looks beautiful. It’s not just me. There is just something about a Japanese knife that fascinates people the world over. That plus this knife makes quick work out of any piece of meat I use it on. PS: All Blades become dull with usage. With a knife from JCK you should also purchase a wet stone from JCK to keep your knife sharp and make the effort to do a good job keeping it sharp.
Excellent craftsmanship and supplied razor sharp. Speedy delivery and great customer service. Very light knife, it is designed for cutting with very little resistance because of the geometry which is a thin narrow grind. It is very dexterous in the hand and a joy to use. Edge retention is excellent as you would expect from R2 Damascus steel. Very pleased with these knives. I have two of each size in this series and consider them all to be excellent. I researched and tested carefully before deciding on them as my main kitchen knives and they are very well priced.
Beautiful little knife. Sharp out of the box. I find myself reaching for this knife more and more. It is a pleasure to use. Can’t wait to get the Gyuto!!!
