Master Saji has now been making knives for over 40 years and has become highly experienced in his art.
After testing and evaluating a very reputable Powdered Metallurgy High Speed Tool Steel, called “R-2” (Manufactured by Kobelco), he decided to produce an exciting new range of this traditionally hammer-forged Damascus kitchen knife using this modern ‘super steel’.
A dark R-2 Damascus blade, which features a crisp and vigorous Damascus pattern. This knife fitted with the natural figure and grain of the Ironwood Handle and polished stainless steel bolster and rivets, which match the energetic style of the Damascus blade.
The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is a beautiful beautiful knife. The black damascus blade is gorgeous and the ironwood handle is quite something. The ironwood handle has a lovely silky feel - the fact that it is a dense wood helps. Truthfully, i bought the blade because it's a Saji and for it's looks but it is very nice in the hand. The fact that it is easier to maintain than the high carbon steel blades is a bonus. JCK makes buying knives a very easy process- they are always efficient and prompt and helpful - not so good for the wallet since they have wonderful products that are hard to resisist buying but their prices are reasonable for the product you're getting. Heavy for size. Lovely blade. Comes moderately sharp. Haven’t noticed any discoloration after several sessions prepping with citrus and onions (I rinsed them during use and cleaned knife immediately). Excellent edge retention.
I knew what I wanted and after some searching found Japanese Chefs Knife.com and I'm glad I did. Purchase, shipping etc was a breeze and to top it all my new knife is just excellent.
Its my favourite knife now. No wonder. I was using global before. It felt a little heavy at the beginning but now im in love. So is my wife so i have had to sharpen it a couple of times, easy to sharpe it is. Takeshi knows what he is doing. No questions asked.
Still sharp as ever. Almost a year since I purchased for my girlfriend and this is her go to knife for all prep. We have followed all of the instructions provided by JCK regarding taking care of the blade and it has treated us very well. As expensive as this blade is I want to make it last for the rest of our lives if we can.
