After testing and evaluating a very reputable Powdered Metallurgy High Speed Tool Steel, called “R-2” (Manufactured by Kobelco), he decided to produce an exciting new range of this traditionally hammer-forged Damascus kitchen knife using this modern ‘super steel’.
A dark R-2 Damascus blade, which features a crisp and vigorous Damascus pattern. This knife fitted with Stag Bone handle scales and polished stainless steel bolster and rivets, which match the energetic style of the Damascus blade.
The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
This knife is absolutely amazing. Not only does it feel amazing in my hand, but it cuts just the same. I am constantly running my fingers over the surface of the steel. The beautiful design of the entire knife is secondary to how smooth it cuts through vegetables. The solid weight makes it simple and effortless to slide through just about any vegetables you desire. So far the blade has completely maintained its edge and I’ve yet to sharpen it, but that is partly due to not wanting to mess up the blade. I am learning to build my sharpening skills, so I don’t want to mess up this edge. I have used the Takeshi on some cuts of meat and it slices through it just fine, but I prefer to use with vegetables. I highly recommend this product. I am not a professional chef, so please take my love for this knife with the understanding that I am a home cook. I bought this knife because I used my friend’s (he is a professional chef) Takeshi Saji and fell in love with it. He bought his from Japanesechefsknife.com and so I went through them as well.
