Fujiwara Kanefusa FKM Knife is a basic utilitarian knife that is made from AUS-8 Molybdenum Vanadium stainless steel - A popular Japanese stainless steel with good cutting performance, rust resistance and ease of re-sharpening.

Fujiwara Kanefusa craftsman is ready to make suitable edge geometry for left handed version by hand sharpening process at 10% extra of the regular price. Please allow 2 to 3 business days for left handed version to deliver.

For your information, most of the Japanese Kitchen knives come originally with double bevel edge sharpened 70/30 (face side/back side) for Western style knives. This geometry came from Japanese Traditional knives with single bevel edge and Shinogi blade construction. This is one of the special features and reasons why Japanese knives have an excellent cutting performance.

However, this 70/30 edge geometry is designed for right hand use, so we have a service to modify it to 30/70 for left handed users with re-sharpening process by skilled craftsman.

Important

This is the Stainless steel blade kitchen knife which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition. 

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for a long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in a dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Great knife Even Better Customer Service

The knife is great. I recommend it wholeheartedly. The customer service was awesome. There was a shipping issue, where the shipping service is at fault. However, the vendor solved the problem and made amends. I wish more businesses operated with this sort of integrity.

Super sharp out of the box.

I ordered this because I had heard good things about it as an entry level Japanese steel knife. It arrived in 2 days from Japan (I live close to the NA DHL hub). I grabbed some things to test its sharpness against the knives I already had. The balance was much better and more comfortable on the FKM. As for cutting things, on sturdier things like potatoes and apples, there wasn’t a huge difference in the resistance of the cut, but I was able to maintain the angle of the cut and general thickness of what I was slicing much more easily. But on things like chicken breast and tomatoes, it was night and day. You just lay the blade on the cutting board and pull back. There is almost no resistance. It’s really incredible.

Elegant, understated, and a true pleasure to use!

The Fujiwara FKM was my choice for moving from a motley lifetime collection of kitchen knives into an exploration of Japanese steel, and I could not be more pleased with the choice. I picked up the 120mm petty as well as a 150mm gyuto and they have quickly become centerpiece tools in my home kitchen. The 120mm petty is the perfect accompaniment to my favorite European paring knife. I'm 5'7" with proportionate hands, so I find the handles a natural and easy grip. The whole of the knife feels solid an competently designed and functions as an easy extension of my hand. For the past month, it's been put into service dressing out multitudes of chili peppers, which it deals with admirably. The sharp, thin blade easily maneuvers within the wavy pepper shapes to strip out seeds, then can continue on with side board work to mince pepper flesh. Admittedly this sleek beauty lacks the board clearance to do full board work comfortably, but for some quick sideboard dices its extra length over my short European paring blades makes a huge difference. Out-of-the-box sharpness was functional, this knife came ready to work. With a short round on sharpening stones, it polished up to razor sharpness and has demonstrated great edge retention. I don't have broad experience with Japanese knives to compare with...I know there are folks who can point to dozens of other blades extolling extra virtue. But a kitchen nerd who just wants a set of quality, dependable tools to enjoy using, this Fujiwara petty fits the bill perfectly. Well-made, easy to maintain, a pleasure to use.
