Misono is one of the best kitchen knife makers in the world and their Molybdenum Steel Series are their most affordable range of knives. However, the quality and finish of these highly practical and functional knives is equal to that of Misono’s more expensive product lines. Indeed, Misono’s high standards of quality have not been compromised in the slightest.

The blade is made from AUS-8 (HRc. 57), a high carbon 13 Chrome Molybdenum stainless steel that has strong corrosion-resistance, great durability, high cutting performance and is easy to re-sharpen.

This knife features full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and stainless steel bolsters for extra durability and improved blade balance.

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

Generally, Japanese kitchen knives are designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. Misono produces 100% left handed version with suitable blade grind angle and edge geometry from the beginning process.

Important

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for a long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in a dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    Overall great knife

    Balanced, comes very sharp from a factory, no additional treatment needed. Very well made, polished edge, quality handle pleasant to touch. I bought 3 knifes of this Misono Molybdenum Steel series - paring, petty (120mm) and boning. All 3 knives were perfect, I was so happy to replace my pretty generic Arcos set of kitchen knives. However, after about a week I paid attention to 2 small dark spots on the very edge of petty knife. At first I thought it was just some food particle that stuck, but after careful wash it didn't came off. After close inspection I found that those were 2 very small chips on the knife's edge with some metal darkening around them. We are very careful with our knives and asked my wife if she dropped the knife or cut something hard, but she said it definitely didn't happen. The small paring knife had very similar usage and it stays in perfect condition. I hope that I'll manage to get rid of those spots during first sharpening.

    Gorgeous knife - feather light

    This knife is fantastic! It's feather-light, yet powerful and precise. It's got a nice feel in your hand and it feels very easy to control. I would absolutely recommend this for anyone looking for an elegant yet simple utility knife.

    I am happy!

    I have been a machinist for almost 20 years and I work to .0002 of an inch or .005 mm everyday. When I first looked over the knive I thought it was machine made. But if you stare at it long enough you can see some very minor imperfections..... It is a beautiful handmade piece of art. It will slice through a soft blueberry with no resistance right out of the box.
