Yanagiba knives are primarily used to slice boneless fish fillets for Sashimi and Sushi dishes, but they can also be used to fillet small to medium-sized fish and are often used for skinning fish. The narrow blade and relatively acute edge angle of the Yanagiba are features which greatly reduce the effort required to cut through ingredients. As with the Sujihiki, the long blade allows the fish to be cut in one single drawing motion, from heel to tip.
The combination of cutting technique, acute blade angle, and sharp edge result in very little cellular damage in the cut surface. This is particularly important for dishes where the fish is eaten raw, because it helps to preserve the original flavor and texture of the fish.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
I had bought the smallest version of this knife and love it. So naturally getting the larger version was the best way to go. It has good weight, keeps sharp for a long time and it's easy to sharpen it. Overall a great product. Would buy again.
Kenetsugu is SHARP. As a prior sushi chef in practice and an intermediate cook, the price and performance for this item for (starting or expert) chef is Phenomenal. I filet'd a salmon with ease, and honestly when someone says something cuts like butter, its not the food but the knife and to be honest, this feels like your'e cutting through air (with control). For any starting sushi chefs or cooks experimenting with fish, I highly recommend this knife.
Unique handle (love it heptagonal handle). Easy to sharp. May not sharp like a blue steel but good enough for every day use and very easy to maintain.
Love this knife! I bought it as a gift for my husband specifically to prep fish. It slices and cuts with precision and the handle is nicely balanced. I would definitely recommend this knife. Shipping was fast too!
