At end of the year 2019, we released the first models in the "Blue Clouds" series: a TsuchimeHammered Kiritsuke Petty and Kiritsuke in AUS-10. Since then, our Blue Clouds knives have become one of our Bestsellers because of the their overall quality, excellent fit & finish, moderate price and stylish, practical design.
We have received many of positive comments about our Blue Clouds knives, including a special request to make a Carbon steel version of the Kiritsuke knives. Now, in the Spring of 2021, we are proud to introduce and finally release our newest Blue Clouds knives, which have Nashiji ("Pear skin") textured, Blue Steel No.2 blades and a beautiful, wavy forge weld line.
The new "Blue Clouds Series" Blue Steel No.2 knives have a smooth Matt Blade Finish and Forged Nashiji texture — an innovative approach that produces very consistent and reliable results, especially when combined with the skilled hand work and finishing work performed by our smiths and craftsmen. The Mirror Polished, Blue No.2 Carbon Steel blade core is clad with low maintenance Stainless Steel and has a stylish, practical Kiritsuke blade shape (Similar to a multi-purpose Santoku or Bunka knife) that is well suited to a wide variety of cutting tasks. Heat treated to HRc. 61 to 62, the double bevel edged blade has a 50/50 symmetrical grind.
The Polished, Vivid Blue Pakka Wood Handle Scales beautifully match the Nashij textured, Blue Steel No.2 Kiritsuke blade. These knives also feature a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets.
The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.
FIrst time a client of JCK site, but I think it's not the last time for sure. I've got my order very quickly. Really impressive service and really fast delivery from Japan to France. These pair is a genuine beauty! From the handle to the tip. I would never imagined I'd love Nashiji finish so much. The knives' balance is perfect for my taste. The Bunka is very comfortable in my hand. However the spine of the petty knife seems a bit too rough at its angles when I use a pinch grip, could be rounded more. Both of them were not very sharp out of the box (just as stated in one of the previous reviews). They were not completely dull, but they were quite far from what you'd expect from Japanese knives. And Bunka has a little imperfection at the very tip. Just a kind of a small oval shaped dent. Hence my 4 stars evaluation instead of 5. These knives are close to be great, but there is still some space for improvement.

The blade is beautiful, the balance delightful. The blade is thinner but stiffer than common western blades in my experience (Zwilling, Wusthof, Icel, Global etc). I love the Kiritsuke profile (I’m a slicer/chopper), though my wife prefers the sharper curve of the chefs knife (she’s a rocker). The blue handle is beautifully done but somewhat polarising. -1 star because the edge arrived usable but blunt (by the Carter three finger test of sharpness). That said, the edge hasn’t a single defect after six weeks - a stark contrast to my stainless knives. The Sayas are awesome and JCK were helpful in supplying them.
I was looking for a Bunka and came across this Blue Cloud Nashiji knives set. They arrived so fast which made me so happy. I haven't bought anything from JCK that I disappoint me yet. These Knives met all my expectations. I love the blue handles, the nashiji finished on the knives, and also the Sayas that purchased together with the set. I also love the small kiritsuke petty knife, too. It is small but stout, well built, blade is thicker and not flexible (bendable), which is why I like it so much. Photos uploaded for your references of the actual knives and how they look like when put with other knives.
