A cutting edge of high carbon Hitachi Gingami No.3 that is welded forged with soft stainless steel for increased toughness and ease of re-sharpening.

Gingami No.3 is a high-grade Japanese stainless cutlery steel for the cutting performance and edge retention similar to high carbon steels, but improved resistance to corrosion.

This knife comes with a comfortable octagonal magnolia wood handle with black water buffalo horn ferrule / bolster, and includes a matching magnolia wood Saya (“Sheath”) -with black pakkawood saya pin- for safekeeping.

The long, narrow, graceful blade of the Sujihiki is particularly useful for trimming away sinew and fat from meat, finely slicing meat or boneless fish, or for filleting and skinning fish. The long blade allows the meat or fish to be cut in one single drawing motion, from heel to tip.

I recommend this product

A light sharp knife

As expected, its sharp straight out of the box. Includes a saya and a pin. It's much lighter than you would expect for a yanagiba. I feel the handle should be heavier to compensate for the light weight. The handle of the knife and the saya don't have a protective coat on it, so be aware you can easily scratch or damage them. I do recommend using a mineral oil and or beeswax for a protective coat on the handle and saya.

Good and sharp knife

It is a nice really sharp knife. It is the fourth Fu-Rin-Ka-zan knife I own now and I like them all.
