“INAZUMA, that means "Thunder Lightning” in Japanese. Like Thunder lightning, the JCK INAZUMA will flash and shine your kitchen to bring you the joy of cooking with fine cutting performance.

Inazuma knife has a unique & beautiful Tsuchime (“Hammered pattern”) textured Damascus blade. This knifefeatures a hand sharpened and hand honed AUS-10 Nickel Damascus stainless steel blade (HRc. 60-61. 50/50 symmetrically ground double beveled edge).

Inazuma knife has Octagon Shape Red-Sandalwood handle with black pakka wood ferrule.

The Nakiri is a double bevel edged knife that is rectangular in profile and has a tall, thin blade. It is popular throughout Japan and is often used by home cooks for quickly and efficiently chopping, slicing or mincing vegetables and fruit. It is becoming increasingly popular with vegetarians.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.

  • Please do not put this knife in the dishwasher, please hand wash.
  • Please do not leave this knife in water or wet condition for long time.
  • After using, please hand wash it and wipe it clean and dry with soft clothes. (Includes bolster and handle part)
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, hard foods such as lobster and crab which have hard surface.
  • We recommend re-sharpening the knife using Japanese whetstones, when it gets dull.

    Kitchen knives review

    Each knife is beautifully crafted and extremely sharp. I received my order of the three knives a day or two before I expected & am very pleased with the look & feel of each knife. They handle well & cut effortlessly. If you’ve never owned kitchen knives before you’ll want to be extremely careful using these. They are razor sharp right out of the box. I can’t wait to come up with another reason to buy my next knife from this store.

    Excellent entry to Japanese-style chef knives

    I bought one of these back in 2012 and it's my go-to for almost anything that doesn't require a pairing/petty knife or something with a more robust edge. Veggie king this is, for sure. Holds a great edge and sharpens easily too, VG10 has been a staple steel for years for a reason - it's inexpensive and works well. The hammered and damascened finishes look great and I find the traditional octagonal handles much more comfortable than Western designs. Bear in mind this Nakiri is (as are all in the series) a thin blade and not meant for heavy work - also means it cuts excellently. Based on other knives I've owned I think these are outstanding values both in 2012 and when I'm posting this in 2021, easily a better knife in my opinion that the main standard German brands in the 2x price bracket. A+, have I mentioned I love this Nakiri?
