This laminated knife looks simple and classic but, once you hold them in your hands for the first time, you will sense the passion and vision with which they were made. The blade is beautifully hand polished to a shiny satin finish, and the blade spine and choil are also polished for better appearance and improved comfort. The Blue Steel No. 2 (Hitachi Aogami #2; HRc. 63) core is sandwiched between two layers of soft stainless steel. This means that you can enjoy the exceptional sharpness and edge retention offered by a premium Japanese high carbon steel, and also the improved corrosion resistance and ease of maintenance offered by stainless steel. Consequently, we highly recommend this knife to first-time users of carbon steel knives.
This knife features a classic design, a comfortable black pakkawood handle, and a stainless steel bolster for better balance and improved durability. The fine blade edge is hand sharpened on whetstones by experienced Master Craftsmen, and is ready for use straight out of the box.

Left handed versions are normally in stock for immediate shipping. However, when it became out of stock, please allow 3 to 6 days for shipping.
For your information, many of the Japanese Kitchen knives come originally with double bevel edge sharpened 70/30 (face side/back side) for Western style knives. This geometry came from Japanese Traditional knives with single bevel edge and Shinogi blade construction. This is one of the special features and reasons why Japanese knives have an excellent cutting performance.
However, this 70/30 edge geometry is designed for right hand use, so we have a service to modify it to 30/70 for left handed users with re-sharpening process by skilled craftsman.

I bought this knife about a year ago and haven’t used it all that often, but also haven’t had to sharpen it until now. It surprised me that something out-of-the box could stay that sharp for that long. But once I sharpened it myself on the Suehiro Cerax whetstones, it blew my mind. I’ve owned quite a few knives, some Japanese, but mostly just solid quality stainless steel. I’ve used them on the same whetstones before, and nothing gets nearly as sharp as this knife gets. I’ve never used knives with a carbon steel like aogami #2, but I’m definitely hooked. The way this steel sharpens is totally different from anything else I’ve used. It’s crazy how the type of steel doesn’t just stay sharp for longer, but actually gets much much sharper and also looks and feels completely different when sharpened. On top of that, the fit and finish on this knife is 10/10. It’s nothing fancy or flashy but extremely clean and simple. Super smooth. The blade is a bit thin, but is very rigid and doesn’t feel fragile. However, you should be fairly gentle with a knife like this.

Cuts everything like butter, a true chief’s knife I would recommend

Читал, что сталь Aogami #2 сильно ржавеет при использовании, но оказалось это не так. Достаточно нож промыть и вытереть тканью и никаких следов коррозии. The package was very well packed. Unfortunately, postal items between Japan and Russia are sent only by sea, so the delivery took 67 days. Mr. Iwahara warned me about this and I agreed to it. The knife is great. It is large, very sharp, cuts very aggressively, the quality of execution is excellent. Before sending it to me, it was smeared with Tsubaki oil to protect it from corrosion, which smells very nice. My wife calls it "the sword". I read that Aogami #2 steel rusts strongly when used, but it turned out that this is not the case. It is enough to wash the knife and wipe it with a cloth and there are no traces of corrosion.
This knife exceeded all expectations. It came well packaged and within a reasonable amount of time. It is absolutely worth every cent. I'm a huge fan of weekend food prep and I look forward to the weekend just to use this knife. The blade is amazingly sharp making meat and vegetables a breeze to slice through. The handle fits comfortably in my hand and allows for a good grip. Maintenance is not an issue - I am able to finish up my knife-requiring tasks faster so I can thoroughly wash off any acidic juices before they settle in. 10/10 would buy again... and likely to purchase another in the same line soon.
