Master Saji continues to produce new and distinctive knives that demonstrate his extensive knife making experience and passionate spirit. This is Master Saji's latest attempt to produce a Santoku Knife that is ideal for home use, camping outdoors, or ‘on-the-go”. These liner-lock knives have a 5-1/4" (133mm) long blade with an R-2 Powdered Metal steel core and outer layers of beautiful, multi-layered, forge-welded Stainless Damascus steel.
The Black G-10 handle is 6-1/4" (158mm) long, is hand contoured for maximum comfort and features a lanyard hole. The curved design helps to keep your hands away from the cutting board.
The opening and closing action of these folding knives is smooth and precise, and the liner-lock mechanism locks the blade very positively and securely. The Torx fastening screws enable easy cleaning and maintenance or the blade, pivot and Stainless Steel liners. Finally, the R-2 Damascus blade provides outstanding cutting performance, so you can enjoy effortless cutting every dinnertime!

Really pleased with JCK’s service. As a repeat customer, everything from ordering, shipping, communication, and of course receiving such a beautifully crafted knife is always 10/10. I ordered this knife close to the Christmas holiday, not expecting to get it until after Christmas Day and received it with 3 days to spare. I was even able to have it custom engraved as a gift for my dad. The knife itself is much larger than anticipated and seems up to doing any task. The blade had a paper thin edge and the beautiful Damascus steel was stunning. Now I want one for me too 😊
Knife is great, arrive with a more dull edge than expected and I had to sand the edges of the spine as it was rather sharp. It's ideal to take the knife with me when I'm going to a friend's house for dinner. Get asked to help in the kitchen and I can pull out a proper sharp versatile knife. Edge geometry is pretty bad, would recommend thinning behind the edge quite a bit . Over all, very happy with the knife, from my favorite knife maker.
This is one of the most unique knives I have bought from Koki. It is bigger and heavier than the photos would suggest. It is beautiful and utilitarian at the same time. The R2 on this sharpens really easily and the edge is super sharp. It is very Saji in its style: sharpish edges on the top, fairly wide blade, and on the heavier side for Japanese knives. The lockup is good but from the factory centering was not quite perfect. That was easily fixable by adjusting the pivot. Fit and finish are not Chris Reeve level but I was not expecting that. A lot of fun to use - always smiling when I'm using it. Typical use cases - I am cooking outside, grilling etc. If you are thinking about getting one, do it, you won't be disappointed.
I purchased this when it first came out around 4 years ago. I've used it and am happy with its size and sharpness and sharpability. I've just purchased the smaller to match, but at this price I may buy another of these. Highly recommend due to workmanship, material quality, and awesome sustained performance.
This is the one and only knife for me!
