Master Saji has now been making knives for over 40 years and has become highly experienced in his art.

After testing and evaluating a very reputable Powdered Metallurgy High Speed Tool Steel, called “R-2” (Manufactured by Kobelco), he decided to produce an exciting new range of this traditionally hammer-forged Damascus kitchen knife using this modern ‘super steel’.

A dark R-2 Damascus blade, which features a crisp and vigorous Damascus pattern. This knife fitted with the natural figure and grain of the Ironwood Handle and polished stainless steel bolster and rivets, which match the energetic style of the Damascus blade.

The Paring knife is useful for a variety of commonplace kitchen tasks, but it is primarily used for peeling and accurately shaping fruits and vegetables. Paring knives are particularly useful when cutting small items held in the hand, which makes them indispensable in the kitchen and an ideal companion for Gyuto knives.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.  

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab..
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    Takeshi Saji Custom Paring Knife

    The knife is amazing. My coworkers in the kitchen think I’m crazy I buy expensive knives, but they don’t understand how good the high speed powdered tool steels are. I use shapton glass stones to sharpen. It is truly a work of art and an amazing tool. I’m sure you see in my purchase history I have bought many knives from you guys. I purchased this knife because I was immediately attracted to larger size, and it still being a paring knife. The weight of the knife makes it feel like your holding a very small gyuto. It is very sturdy, and cuts like a laser. Very balanced. I mostly use this knife for cutting shallots as fine as possible. Always fast shipping and great customer service.

    Number 4 of my Takeshi Saji R2 Black Damascus series

    The Paring is very close to my wifes favorite, the Petty, they are both used constaintly in a very busy environmaent. I use the Pro Edge sharpening system and find that I can get an amazing edge that lasts for 3+ weeks with constaint daily use. We are careful with all our Takeshi Saji knifes as they hold a very sharp edge and do not appreciate rough handling . The balance and handle design are perfect , easy on the user. These knives are part of our family and will be handed down to another generation of keen cooks. The service I have alway received from Koki at JapaneseChefsKnife has always been the best.     Fabulous Knife by an Incredible Blacksmith

    This is my second knife by Master Saji (along with the santoku in this same line) and both are highly functional works of art produced with a phenomenal craftsmanship derived from a lifetime of dedication to one's craft. Yes, the knife is incredibly sharp and is easy to resharpen to a razor edge. The knife is wider near the base (27mm) than typical paring knife, which makes using this knife against a cutting board easier than with a narrower blade without sacrificing the ability to peel or otherwise use the knife on fruits/vegetables in the hand. Overall, an amazing knife from JCK, where working with Koki is always a pleasure!
