Master Saji has now been making knives for over 40 years and has become highly experienced in his art.
After testing and evaluating a very reputable Powdered Metallurgy High Speed Tool Steel, called “R-2” (Manufactured by Kobelco), he decided to produce an exciting new range of this traditionally hammer-forged Damascus kitchen knife using this modern ‘super steel’.
A dark R-2 Damascus blade, which features a crisp and vigorous Damascus pattern. This knife fitted with the natural figure and grain of the Ironwood Handle and polished stainless steel bolster and rivets, which match the energetic style of the Damascus blade.
The Bunka is a general-purpose kitchen knife that used to be just as popular as the Santoku, but has become less commonplace in recent years. With its tall blade, the Bunka knife is particularly suitable for cutting vegetables or fruit and the triangular tip area is particularly useful for detailed work and cutting fish or meat.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

Beautiful knife. Sharp all-purpose weapon in the kitchen. The special blade shape slightly better than a Deba or Santoku.
This knife is just amazing. It is of course a beauty and the Bunka-shape of the blade with the pointed tip for detailed work makes it extremely versatile. For those who are really intending to use this knife regularely I have to mention that it is really heavy but on the other hand extremely well balanced. For me - grown up with german knifes - this is not an item, but it might be for people who are used to work with lightweight knifes. No need to say, the knife was very sharp out of the box. Since this is my first R2 blade I was curious how it would respond to grinding it up to razor sharpness. I can say, this is not an item, at least if using hard stones like shapton as I do. This is going to be one of my all time favorite knifes, for sure!
Great balance, super nice feel/control in the hand. The blade only required a few strokes on my leather strop to get a really nice cutting edge. Really easy on the hand as you can go thru a lot of prep work without taxing your muscles.
