To match the special matt finish of VG-10 Damascus blade, Mr. Masui decided to use beautiful natural wood texture of Cocobolo wood handle scales. Due to the restriction of importing the natural wood materials, Cocobolo wood material is becoming more distinctive. The ‘Cocobolo Wood handle scales and the seamlessly welded stainless steel bolster are nicely hand contoured, for perfect balance and comfortable grip. A gorgeous decorative Mosaic Pins add an elegant accent and contrast nicely with the unique wood handle.The handle and the seamless stainless steel bolsters are contoured by hand so that they are comfortable to grip and are nicely accented by a decorative mosaic pin and a black & gold spacer.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Very pretty knife. Craftsmanship is praiseworthy. Not as sharp as I had believed a Japanese knife is supposed to be. My Sabatiers are sharper, and less prone to damage.
After having this knife for a few weeks, I find that it’s my new go-to, which is really surprising, because I have a blue steel #2 nakiri that I absolutely love. I’m a home cook with a vegetarian diet and this knife is perfect for all of my needs-- I even use it to cut through winter squash, allbeit carefully. It’s lightweight and gorgeous! Came extremely sharp. Shipping took about five days, which blew me away, considering the knife had to travel about 6,000 miles to get to my humble Minneapolis home. Definitely recommend.

Great edge retention and gorgeous! We cut hundreds of sushi rolls, sashimi, prep fish, etc., daily and this is our go-to knife. The 210mm is a very versatile size that can cut sashimi in one pass yet not too long to filet whole fresh fish. I only use the polish stone once or twice a week to get any lost edge back. Going to order another one so my wife and I quit fighting over who gets to use it. Great company, outstanding product!
