Mizuno Tanrenjo Akitada Hontanren Series Knife is made with Ao-ko #2 (Blue Steel No.2; HRc. 62-63) and is the best-selling range of knives among Mizuno large selections.

Hontanren Series knife is forged, sharpened and polished using traditional methods and Mizuno Tanrenjo’s passion for fine craftsmanship ensures that these knives have outstanding sharpness and cutting performance.

This knife is fitted with a traditional Japanese ‘D-shaped’ magnolia wood handle with a water buffalo horn ferrule / collar and also includes a matching magnolia wood Saya (Sheath) for safekeeping.

The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

    Excellent knife

    When I first opened the box the knife itself looked unremarkable; the kanji was shallow in spots; the blade was somewhat dull looking; the sharpness was a seven out of ten. So I gave it a good initial sharpening. Then I understood why so many chefs love this knife. It has a perfect balance of weight-to-length, it cuts through food effortlessly, has amazing food release, and the edge stays sharp a very long time. I bought it with the octagonal handle (a must) and ordered the 240 with the Shinogi. Three days later I changed my mind and asked Koki if I could change my order to a knife without the Shinogi. He said yes, and worked with Mizuno to make the change. Thank you Koki!

    Looking for a Blue-Steel-Knife?

    Looking for a great Blue-Steel-Gyuto? Look no further - this is it. Very well made. Great sharpness. Great geometry - literally "falls" through things - no strenght needed... I love it.

    240mm of greatness

    By far the nicest knife I own, even though it has a very simple presence. Purchased this on a whim as I researched a few knives. Normally using a western style German chef’s knife, and this is so much lighter, excellent balance, and very easy to clean. Unreal sharpness. Octagon handle is very comfortable. 240mm is a great size for all around usage. Linking this better than my santoku, which is perfect, as my wife can use that now. I can’t imagine needing a nicer knife for my daily use.
