Generally, Japanese kitchen knives are designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. Misono produces 100% left handed version with suitable blade grind angle and edge geometry from the beginning process.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
This was the first knife I bought from JCK. Delivery to NZ from Japan in 3 days !! This knife is superb. Great balance, great design. The mystery Swedish steel is outstanding. I sharpen this knife on Shapton stones, but any good quality waterstone would do. Start with 1000 grit, then up to a 8000 or 12000 stone, finish with stropping on diamond paste. The knife becomes so so so sharp !!! And really a pleasure to use. This is a superb knife for all "newbies" to Japanese kitchen knives. Well done JCK

I selected the Misono UX10 Santoku as a multi-purpose knife for my everyday needs. I do use it almost everyday, mostly for chopping and slicing vegetables, and it has not disappointed. It is well-balanced, easy to handle, and easy to care for. After ordering from JCK, I was quite surprised when it arrived in only 2 days! I was a little concerned about sharpening with a whetstone, so I asked JCK for some tips. Iwahara-san was quick to respond and provided me with a clear tutorial video for sharpening my knife. I've sharpened my knife about 5 times in the 10 months I've had it, with good results, using the JCK #1000/#4000 combination whetstone. The Misono UX10 is an excellent knife that holds its edge well and the support I've received from JCK is outstanding.
