Misono uses “High 16 Chromium and Molybdenum Stainless Steel" (HRc. 58-59), which offers superior durability, rust resistance and ease of sharpening than standard Molybdenum stainless steels.
This knife features full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and stainless steel bolsters for extra durability and improved blade balance.

Generally, Japanese kitchen knives are designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. Misono produces 100% left handed version with suitable blade grind angle and edge geometry from the beginning process.

It arrived a week after ordering. The packaging was perfect. The 21cm Misono Slicer is slim and light, easy to grip, and very easy to handle. And of course, it cuts well. The customer service after purchase is also great.

I knew Japanese knives are high-quality and a pleasure to work with, but I never expected this. Each cut is smooth and precise without having to apply too much pressure on the knife. I love using them.
I use it in a restaurant kitchen, it is a perfect length for pairing and slicing meat. It is really strange that more of the knife producers don't go for this option of sujihikis ( 180 to 210 mm ) because those are really useful in professional settings. I hope that will change soon... The knife itself is a nice piece, has very nice f&f , the steel is fine with a good bite,I could compare it to a aeb-l and even like it more than sweedish non stainless ( which is by the way more expensive than 440)... gets very sharp and easy to resharpen with ceramic rod, comfortable handle as always with Misonos... over all I am very satisfied with it... and of course with Koki's outgoing and exceptional service.
