Masamoto CT Series Knife is highly affordable Western-style Chef’s knife that features a high carbon steel blade (HRc. 58-59), full tang construction, attractive red sandalwood handle scales and a seamlessly bolster. The edges of the handle and bolster have been nicely rounded to allow a comfortable, secure grip.
Compared to stainless steel knives, carbon steel blades require additional care and maintenance to avoid rust. However, because high carbon steel knife will maintain a very sharp edge for a long time and are can be re-sharpened with relative ease, we thoroughly recommended them to serious knife users and culinary professionals.

For your information, most of the Japanese Kitchen knives come originally with double bevel edge sharpened 70/30 (face side/back side) for Western style knives. This geometry came from Japanese Traditional knives with single bevel edge and Shinogi blade construction. This is one of the special features and reasons why Japanese knives have an excellent cutting performance.
However, this 70/30 edge geometry is designed for right hand use, so we have a service to modify it to 30/70 for left handed users with re-sharpening process by skilled craftsman.

I bought this knife with the other two knives 2 months ago. First, I need to mention that the order came at the fully prescribed time. On the other hand, it was the knife I bought to meet the Petty Knive segment. As the first product I buy as a carbon steel, it is especially worthy of ease of use and the pleasure of using it. Especially sharpness and lightness, not only me, but my wife and mother who use this knife at home awaken the same beautiful feelings. I definitely recommend it.
Carbon steel is interesting. It stains and gets a mottled look and if I don’t wipe it down after use I end up having to polish with an abrasive cleaner to get the rust off. But, it stays sharp as any knife I own and I haven’t needed to use a stone on it yet, just a honing steel.
Best petty knife you will ever own. Razor sharp right out of the box. Needs tender loving care but what a beautiful little knife.
this is a perfect knife for beginners, it has all the qualities of the more expensive Japanese knives, but at a more budget oriented knife. As much as i like the traditional Japanese handle, this western style is perfect for the person who is starting to use high quality knives. in fact, i was so impressed i bought one for everyone in my office for Chirstmas.
