Kiritsuke knives are becoming much more commonplace and popular amongst culinary professionals and Chefs because, similar to a multi-purpose Santoku or Bunka knife, they have a very capable blade shape that can perform a wide variety of cutting tasks.
The Heptagonal (Seven-sided) Brown Pakka Wood Handle has a Black Pakka Wood Ferrule, a White Spacer and a decorative Mosaic Pin. This elegant, high-quality handle beautifully matches the stylish Kiritsuke blade shape and the overall design. Kanetsugu’s uses their own modern manufacturing technologies to create this practical, high-quality handle, which is water-resistant, crack-resistant and easy to clean.

The lightweight, double bevel edged Kiritsuke might be compared to a combination of the Nakiri and the Sujihiki. It is a very versatile knife that can be used to perform many of the tasks normally done with a Gyuto.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

Vedel som čo idem kúpiť. Mojej dcére som už kúpil 180 mm Bunka. Veľmi sa mi nôž páči, či už po dizajnérskej stránke (to je vec vkusu), remeselnom spracovaní, ktoré je fantastické a aj jeho ostrosť/nabrúsenie z fabriky je skvelé. Najmä však chcem vyzdvihnúť špičkovú, profesionálnu a veľmi milú komunikáciu s Japanese Chefs Knife - konkrétne s pánom Koki Iwahara, za veľkú ochotu a ústretovosť ohľadom dodania a dopravy. Týmto ešte raz veľmi pekne ďakujem Juraj I knew what I was going to buy. I have already bought my daughter a 180 mm Bunka. I really like the knife, whether in terms of design (it's a matter of taste), the craftsmanship, which is fantastic and also its sharpness / sharpening from the factory is great. The knife is everything I hoped it would be and more shipping was extremely fast considering it came to the United States from Japan and I would also like to add if your nervous about ordering don’t be this company is legit and I will be ordering from them again

This knife is very high presentation when hand on. It feels solid on the grip and beautiful mirror polished damascus blade. It is premium quality Japanese traditional knife. I'm very high-recommend for both professional and home user. JCK customer service is top. My knife got delay and I had ton offer to make up. So much satisfy.
