This year, Kanetsugu celebrates their 100th year in business. To celebrate this special anniversary, Kanetsugu have produced some beautiful and practical 'next-generation' R-2 Damascus Kiritsuke knives, which deliver an even higher level of cutting performance!
This is the very much limited edition ZUIUN KIWAMI 極 Series. R-2 Nickel Damascus blade is fully DLC special coated, makes powerful and elegant, Dynamic Black Damascus blade.
What is DLC Coating ?
DLC (Diamond-Like Carbon) coating is a thin layer of carbon material that mimics the properties of diamond. It is known for its high hardness, low friction, and excellent wear resistance. This coating is commonly applied to metal surfaces to improve their durability and protect them from corrosion. DLC coatings are also heat-resistant and provide a sleek, black appearance, making them popular in high-end products like watches, knives, and automotive parts. Due to its unique properties, DLC coating helps to extend the lifespan of tools and machinery while improving their performance.
Kiritsuke knives are becoming much more commonplace and popular amongst culinary professionals and Chefs because, similar to a multi-purpose Santoku or Bunka knife, they have a very capable blade shape that can perform a wide variety of cutting tasks.

The lightweight, double bevel edged Kiritsuke might be compared to a combination of the Nakiri and the Sujihiki. It is a very versatile knife that can be used to perform many of the tasks normally done with a Gyuto.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives.
