Saiun Damascus knives have a cutting edge of VG-10 stainless steel that is clad with Damascus (Total of 33 layers; HRc. 60-61) and use Kanetsugu’s special convex edge profile to provide outstanding cutting performance and excellent edge retention. A comfortable black linen Micarta handle accentuated the wood-grain pattern of the Damascus and is shrink-proof, very durable and water-resistant. The stainless steel bolster improves the blade balance and durability and looks stylish next to the red fiber spacer. This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives.

This knife is brilliant, it's very very sharp, holds it's edge well, comfortable in the hand and looks great.
This is my first Japanese chefs knife, so please excuse my lack of experience. The knife is comfortable to use with my medium sized hands. It seems well balanced. It arrived very sharp with a nicely polished edge. The grind looks symmetrical. The micarta handle fits perfectly against the bolster and tang. It performs very well with chopping tasks. I appreciate the VG-10 steel, as it doesn't require constant oiling and care. The Damascus is beautiful and I also like the thin red accent between the bolster and the handle. After a few weeks of gentle use it's still good as new. It appears to be a very high quality knife. I suspect it'll last many years.
We absolutely love this knife. It was extremely sharp and has a great balance in the hand. I love the larger heft of the handle and the Damascus steel blade is beautiful. It is our go to knife for most of our every day cooking tasks. I am ready to purchase another for a gift when they are back in stock.
Always used simple knives from the supermarket. Later I bought a knife from AUS 8 for my parents. It turns out that the knives from the supermarket, even sharpened ones, are quite so-so. I decided it was time to buy myself a really knife. SD-04 - This is an ideal option in terms of price and quality ratio. Perfect balance, well sharpened, great looking. Oh yes, it also cuts, my wife, cut her finger on the first day of use. It's not perfect, but it's a great buy for the money!
