Saiun Damascus knives have a cutting edge of VG-10 stainless steel that is clad with Damascus (Total of 33 layers; HRc. 60-61) and use Kanetsugu’s special convex edge profile to provide outstanding cutting performance and excellent edge retention. A comfortable black linen Micarta handle accentuated the wood-grain pattern of the Damascus and is shrink-proof, very durable and water-resistant. The stainless steel bolster improves the blade balance and durability and looks stylish next to the red fiber spacer. Kanetsugu use all their passion and experience to make certain that these extremely beautiful knives are still exceedingly practical and cut exceptionally well.
A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
The knife has been terrific. Great value for the money.
It lost its sharpens after a month.
Dear Gabor We apologize the knife could not stay sharp longer than your expectation. But every knife (even the high-end high price knives) requires the resharpening process. We recommend to sharpen Japanese knives by whetstone. The sharp edge can staylonger and you can maintain the edge by youself. It requires time and practicing, but once you get accustomed to the whetstone hand sharpening, you can understand why this sharpening method has been common and efficient. Here is the sharpening instruction Video from experienced craftsman at https://www.youtube.com/watch?v=i6JA2NVcrOY We hope your Kanetsugu Saiun knife will be your great cooking partner for long time. If you will still have problem or will have any questions, please let us know and help. Happy New Year 2022 ! Best Regards Koki Iwahara KENCREST JCK
sharper and more a stable blase than my miyabi petty. in heavy use daily....simply fab !
I bought the Kanetsugu Petty and Gyuto for my wife as a birthday present. They have a great weight and balance. Smoothest cutting knife I've ever used. Feels like what imagine shooting ****** for the first time would be like. She loves them and our marriage is better because of them. Also, the customer service has been amazing. There was an accidental shipping mixup that was very quickly and seamlessly resolved. I highly recommend this knife and buying it from JCK!
Bought this one as a gift for good friends. When receiving it I had really hard times to give it away :-) It is perfectly balanced and super sharp, nice size 12 cm) for most allday cutting purposes and really a pure but calm elegant appearance.
