The secret behind the outstanding cutting performance of Kanetsugu knives is their custom-designed convex blade profile and their thin cutting edges, which are suitable for fine cutting tasks. The AUS-8 Molybdenum Vanadium stainless steel blades of the Pro M series are corrosion-resistant, tough, strong and easy of re-sharpen. These characteristics make them very suitable for first-time users of Japanese knives, but cost-conscious professionals will also appreciate them. Their handles are made from black-colored pakkawood, which is water-resistant, durable and very stable. The rounded handle shape provides a comfortable, secure grip and is well balanced against the weight of the blade.
A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

I use this petty knife in the daily basis and it comes in handy when it comes to doing designs on fruits.
Very high quality knife, excellent
Very high quality knife, excellent
I am a home cook with adequate (but by no means extraordinary) knife skills. While I have neither the means nor the inclination to buy extreme high end cutlery, I do appreciate good knives and these (I purchased both a gyuto and petty) certainly qualify. They are comfortable to grip. sharp and nimble. The fit and finish are outstanding for the price. For me they hit the "sweet spot", giving me great performance at a very reasonable price. I have to add that the service was outstanding as well. I was literally stunned to receive the knives (from Japan!) 2 days after placing the order. Kudos Iwahara-san!
I'm buying my second Kanetsugu Pro M Series knife. The first was the Santoku, I've had it for almost a year now and I haven't had to sharpen it yet. It is very good quality, very sharp! Now I bought the Petty 130mm and I am very happy! Now I have a great tool in my kitchen! Thank you!
