Ever since we first started to offer Kanetsugu knives to our customers, back in 2006, we have received many positive comments about Kanetsugu’s knives. The secret behind these words of praise is, of course, Kanetsugu’s original convex edge geometry.

We are excited to reveal Kanetsugu’s new line of knives, which are the product of their vision and passion.
This new Upgraded Version has a Classic Hammered Finish and a San-Mai (Three-layer) Blade, which is made with a VG-10 Cobalt Stainless Steel core that is sandwiched between soft, corrosion-resistant Stainless Steel. The San-Mai blade has been beautifully mirror polished to add elegance to the natural character of the Hammered Tsuchime Texture and give this Wa (Japanese-style) knife a more modern style.
The Heptagonal (Seven-sided) Brown Pakka Wood Handle has a Black Pakka Wood Ferrule and excellent fit and finish. The stylish shape of the Wa (Japanese-style) handle perfectly matches the Classic Hammered Finish of the San-Mai blade.
Kanetsugu uses their own modern manufacturing technologies to create these practical Wa knives and high-quality handles, which are water-resistant, crack-resistant and easy to clean.

Wa Petty: A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.
Wa Santoku: The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife. Compared to a Western-style handle, the lightweight traditional Japanese handle of the Wa Santoku knife moves the balance point of the knife further towards the tip, which makes it feel more nimble and precise.
Wa Gyuto:The lightweight, Wa Gyuto can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Wa Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives.
