  It has been always pleasure to work with Master Gotou and his team of highly skilled craftsmen to develop our high quality KAGAYAKI series of Western-styled knives.  Kagayaki Basic Series, KAGAYAKI VG-10 Series, and KAGAYAKI CarboNext Series have each become very popular with our customers, due to the consistently high standards of quality and craftsmanship achieved by Master Gotou and his team of fine craftsmen.

  In order to satisfy new market demands, including those of a large number of experienced users and knife enthusiasts, Master Gotou has recently been refining his techniques for making the new generation of special steel knives. Master Gotou selected a special Powdered Metallurgy High Speed Tool Steel called “R-2”, which he heat-treats to HRc. 63. R-2 is made by a highly reputable Japanese company called Kobelco, and the steel offers remarkable cutting performance and edge retention.  It is 3 layers construction blade, outer soft stainless steel supports the R-2 hard steel core for making the strength and ease of the maintenance.

  The knives feature full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and stainless steel bolsters for extra durability and improved blade balance.

  The knife also comes with a matching wooden Saya (Sheath) with a decorative black lacquer finish.

 The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

About Left Handed Version

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Outstanding

Just received this gyuto as my first purchase from JCK, and it certainly won't be my last. This is now easily my favourite knife in my collection, and Koki's customer service has been excellent. The gyuto itself is spectacular; the fit and finish feels on the same level or even better than the Misonos I have handled, and the performance is stellar. Needless to say, it is razor sharp and, being R2, will hold the edge for quite some time. I can't comment on sharpening just yet, and probably won't need to for a while, but from the other reviews I'm sure this will likewise be a pleasant experience. I'd really recommend this knife and am already looking into my next purchase with JCK (likely the petty from this same series).

An exceptional performer

Truly amazed by what I've seen here. I am familiar with the somewhat difficult deburring with other, some very well known knifes of this steel: here, all went very easy, with conventional stones. The knife takes and holds a surprising keen edge. All signs of a very well mastered Heat Treatment. Now its use: the steel offers a lot of refined bite, and holds it. If that's what you're looking for, don't hesitate. The feeling the knife provides is very direct: no damping. Must have to do with the thinneth behind the edge edge and the large exposed core. I should note the very high level of fit & finish.

High quality step-up basic

This is a step above a basic Western Gyuto. The R-2 holds an extremely sharp edge for an amazing amount of time and use, and the finish and details of the blade and the smooth handle are well above my expectations. It’s the perfect balance and length for my everyday home use. Well Done! As usual for JCK, service and fulfillment was exceptional.

Fine dining line cook

This knife is great for fish, veggies, fine work, slicing. Stays insanely sharp for a long period and easy to resharpen. R2 steel is the way to go.
