  It has been always pleasure to work with Master Gotou and his team of highly skilled craftsmen to develop our high quality KAGAYAKI series of Western-styled knives.  Kagayaki Basic Series, KAGAYAKI VG-10 Series, and KAGAYAKI CarboNext Series have each become very popular with our customers, due to the consistently high standards of quality and craftsmanship achieved by Master Gotou and his team of fine craftsmen.

  In order to satisfy new market demands, including those of a large number of experienced users and knife enthusiasts, Master Gotou has recently been refining his techniques for making the new generation of special steel knives. Master Gotou selected a special Powdered Metallurgy High Speed Tool Steel called “R-2”, which he heat-treats to HRc. 63. R-2 is made by a highly reputable Japanese company called Kobelco, and the steel offers remarkable cutting performance and edge retention.  It is 3 layers construction blade, outer soft stainless steel supports the R-2 hard steel core for making the strength and ease of the maintenance.

  The knives feature full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and stainless steel bolsters for extra durability and improved blade balance.

  The knife also comes with a matching wooden Saya (Sheath) with a decorative black lacquer finish.

 A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Thing of beauty

The order took 8 days by DHL to Fremantle, Australia. The purchase experience was very nice, and the product is high quality and gorgeous to look at. The included wooded saya fits perfectly. I must purchase a #6000/10000 whetstone before I use it too much. I have a 1000/4000 stone, but want to never need to use it on this knife!

Nice R-2 150 mm Petty

Bought it for my wife so that she has a good stainless and pretty short knife... The knife is indeed quite pretty with excellent fit and finish. Nice blade appearance and a beautiful mosaic pin. Wish it had been taller at the heel and thinner behind the edge. Out of the box it is reasonably sharp but could be better. I'll have to improve that aspect. My wife agrees.

I received the knife few days ago. The packaging always shows to me the attitude of the seller. In this case, it was well prepared – solid carton box within which the knife-box and saya were wrapped in few layers of good quality bubble-wrap and fixed to the box with tape in order not to move. The knife is very high quality with nice details. The blade is extremely sharp – like a surgical instrument. I tried the sharpness of the very tip on a tomato and without any pressure it cuts the skin and you can basically cut shapes and curves without any effort, just like drawing with a brush. The saya that comes with the knife is beautiful and fits the blade exactly without any play – obviously it was customised. In conclusion I would say I have beed a client for probably more than 10-15 years and I always come back. All my knives and accessories bought from JapaneseChefKnife.com are very high quality peaces of art. Customer support by Koki Iwahara is very good.
