Kagayaki Basic Series, KAGAYAKI VG-10 Series, and KAGAYAKI CarboNext Series have each become very popular with our customers, due to the consistently high standards of quality and craftsmanship achieved by Master Gotou and his team of fine craftsmen.
In order to satisfy new market demands, including those of a large number of experienced users and knife enthusiasts, Master Gotou has recently been refining his techniques for making the new generation of special steel knives. Master Gotou selected a special Powdered Metallurgy High Speed Tool Steel called “R-2”, which he heat-treats to HRc. 63. R-2 is made by a highly reputable Japanese company called Kobelco, and the steel offers remarkable cutting performance and edge retention. It is 3 layers construction blade, outer soft stainless steel supports the R-2 hard steel core for making the strength and ease of the maintenance.
The knives feature full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and stainless steel bolsters for extra durability and improved blade balance.
The knife also comes with a matching wooden Saya (Sheath) with a decorative black lacquer finish.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

This knife is great, amazingly sharp and feels light in your hands. It is perfect for slicing vegetables and precision cutting - recommended without hesitation.
This knife is beautifully made down to the smallest detail. Blade and handle are very well balanced in size and functionality. I think the san-mai blade is just right for this petty knife, more layers suiting better to Gyuto knifes. I have chosen this knife with a R2 cutting edge, because I made very good experience in terms of edge retention and easy to sharpen by a wetstone due to the high number of fine carbides. The blade then stays sharp for a very long time. Due to the handy size it‘s definitely a wife‘s knife and she adapted it immediately.
