Since my first glance, I knew that these beautiful Damascus knives should be called "Uzushio" (渦潮), which means "Whirling Tides" in Japanese. The beautiful and unique Vortex Damascus pattern of the "Uzushio" knife reminded me of tidal waves, which each have a unique shape that is constantly changing.
Each knife has a unique and beautiful Vortex Damascus blade. They feature a hand sharpened, hand honed VG-10 stainless steel blade core that is clad on both sides with 33 layers of nickel-stainless Damascus steel (HRc. 60-61. Double bevel blade with 50/50 symmetrical grind).
The knives feature a full-tang construction, Black Pakka Wood handles scales, a stainless steel bolster and stainless steel handle rivets/pins.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This blade is very well balanced fits comfortably in your in in hand very sharp I will be going back for another !
its seemingly high quality and sturdy, beautiful.. however some minor issues. the spine of the knife had a bit of a sharpness to it and felt like i can cut myself, i had to sand it down a bit. also, my knife out of the box was quite dull. i was expecting more of an edge on it. the bevel semed really short on it too, one side looked like it should, the other was half the size.. i dont know if thats normal. I had to run it on my 1k then 6k to get it in the ballpark of my other japanese knives. size is perfect, great addition to my gyoto and santoku
First of all I need to say this is a 3rd purchase from JCK and my 8th knife from JCK. The service is always great as well as all knives. I purchased this particular knife for my partner and she loves it. Right now it's her "go to" knife when she is cooking. It's long enough for big jobs and small enough for fine cutting. It's well balanced and stis nicely in hand. No need to say it's a cool-looking design.
