From my first glance of this beautiful knife, I knew it should be called "Gekko”, or 月光, which means "Moonlight" in Japanese. From every angle, the Gekko knife reminded me of the way that the shape and light of the Moon changes each night.
Gekko knife has a unique & beautiful Tsuchime (“Hammered pattern”) textured Damascus blade. They feature a hand sharpened and hand honed VG-10 stainless steel blade core that is clad on both sides by a 15-layer Damascus stainless steel (HRc. 60-61. 50/50 symmetrically ground double beveled edge).
Gekko knife uses a full-tang construction, and has Mahogany wood handle with a stainless steel bolster and handle rivets.
The long, narrow, graceful blade of the Sujihiki is particularly useful for trimming away sinew and fat from meat, finely slicing meat or boneless fish, or for filleting and skinning fish. The long blade allows the meat or fish to be cut in one single drawing motion, from heel to tip.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Excellent hand made job, ideal manufacturing. Very useful not only for fish or meat. Just handy knife for a lot if task in your home when you need a long blade. Cheap price, anti stick blade, my recommendation for sujihiki.
The knife is beautiful, it is really sharp and the VG 10 core is easy to sharpen. I chose this knife because i was looking for a VG10 left handed yanagiba but after some reseach i understood that they don't exist and i found this beautiful knife . The knife is factory made (also the forged ones are made in factory, it is the name of the production method) , you can notice it easly when you have it in your hand, the feeling is different, the blade is really light and it doesn't "sound" as my other kinfes. The metal bolster is not a part of the blade like in a forged one but is a part of the hadle, but everything is well polished and you can barely notice it. The handle is very confortable. the knife is very sharp out of the box, sharper than my other knifes, so i need to buy a 3000 stone XD For the price is a beautiful knife, with and high level steel and a beautiful damascus. the handle is well polished and also the blade, there are not steps between the metal and the wood, i m impressed.
