JCK Natures

JCK Natures Gekko Series GE-1M Petty 140mm (5.5 inch)

Availability: Normally ships the same day

From my first glance of this beautiful knife, I knew it should be called "Gekko”, or 月光, which means "Moonlight" in Japanese. From every angle, the Gekko knife reminded me of the way that the shape and light of the Moon changes each night.

Gekko knife has a unique & beautiful Tsuchime (“Hammered pattern”) textured Damascus blade. They feature a hand sharpened and hand honed VG-10 stainless steel blade core that is clad on both sides by a 15-layer Damascus stainless steel (HRc. 60-61. 50/50 symmetrically ground double beveled edge).

Gekko knife uses a full-tang construction, and has Mahogany wood handle with a stainless steel bolster and handle rivets.

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

We believe quality and performance of Japanese knives are best in the world and hope you enjoy fine craftsmanship and spirits from your new knife. With proper cares, every Japanese knife can be your special cooking partner for long time.

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.

Great Knife

My first Japanese style knife. I am quite impressed by it, I will hopefully be starting a collection of them, probably a Kiritsuke Yanagiba next or Kama Usuba. The blade: Very sharp, it slides through meat like butter, Vegetables like a sword through bamboo. The handle: Good quality, with a smooth finish it is very comfortable to hold. Sturdy feeling in the hand means i can apply more pressure than I would with a cheap supermaket alternative. Aesthetics: Looks good, the pattern is a little less defined than I thought it'd be, but nonetheless I like it. Overall it feels very balanced, with a sturdy handle and light blade coupled with fine craftmanship it is a great small knife that i will be using on a daily basis.

Another fine addition!

A few years ago I ordered myself several JCK knives as a 40th birthday present. I have been impressed and totally satisfied! I ordered a Hattori FH series santuko and a petty knife as well as 3 beautiful Damascus Gekko series knives (chef's 7", Santuko, and paring). A few simple sharpenings have sufficed to keep them all perfirming flawlessly for the most part. At the time the JCK Natures Gekko Series GE-1M Petty 140mm was out of stock so I ordered a very similar (looking) knife from a different maker to fill in my "set." That cheaper knife has never performed nearly as well having inferior steel and edge grind. I was finally able to catch it back in stock and am so pleased to have this fine cutting machine working with me in the kitcen! My only complaint is a personal preference-: I do not like the blade design on the paring knife--being wider at the base and swooping up a bit gives the blade an odd angle from the handle--I would prefer a more streamlined blade with an edge running more parallel with the handle.

Excellent value

A great knife for its price - it retains sharpness for a long time, and is fairly easy to re-sharpen. Well-balanced and with a good grip. Also it is quite nice- looking!
