Our JCK Natures Knives are a fusion of the craftsman’s special artistic techniques and the magnificent scenery of almighty nature.    At the beginning of the year 2020, these JCK Natures 青雲 "Blue Clouds VG-10 Tsuchime Damascus" knives have finally been finished, and we are very excited to introduce and offer these new products to you.   The "Blue Clouds" knives have an impressive mirror polished blade with a Tsuchime Hammered Texture and total of 33 beautiful Damascus layers. The rust-resistant VG-10 High Carbon Stainless Steel blade core is clad with many layers of beautiful Damascus. Heat treated to HRc. 60-61, the double bevel edged blade has a 50/50 symmetrical grind. 

The Polished, Vivid Blue Pakka Wood Handle Scales beautifully match the mirror polished VG-10 Tsuchime Damascus blade and the knives have an excellent overall level of fit & finish and quality. The handle material is strong, resists water and resists shrinkage. The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.

These knives feature a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets / pins.

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.

 

  • Before starting to use the knife, please wash it with water for cleaning up.
  • Please do not put this knife in the dishwasher, please hand wash.
  • Please do not leave this knife in water or wet condition for long time.
  • After using, please hand wash it and wipe it clean and dry with soft clothes. (Includes bolster and handle part)
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, hard foods such as lobster and crab which have hard surface.
  • We recommend re-sharpening the knife using Japanese whetstones, when it gets dull.

    Great knife set, quick shipment!

    This is my second purchase of JCK knives, having purchased JCK CarboNext Gyoto via Amazon earlier. This set is only available directly from japanesechefsknife.com website. Delivery was quick, took just a few days to ship from Japan to US. Both knives look great, have comfortable handles, and were fairly sharp out of the box, although I felt that they could be sharper. Few passes on a whetstone and a strop, and they were razor sharp! I've been using both knives for over a month now, and they hold a sharp edge still. Great purchase!

    JCK Natures Blue Clouds Series VG-10 Tsuchime Damascus Petty 135mm & Santoku 180mm

    I purchased this item as a gift for my mother who is a smaller woman. This set is the perfect size for her, and she is amazed at the quality. Even though these would be considered an entry level set, I would put these up against many of the more expensive lines of well-known mass-produced brands. I highly recommend knives from JKC, once you go down the road of quality Japanese steel, you will not go back.

    Not bad

    Shipping was insanely fast to the US. Not sure how they managed this. The knives are well made, with above average fit and finish. There are a few minor flaws, but most people probably would not notice them. The damascus looks fantastic and is polished to a semi mirror finish. Sharpness was good and certainly better than most knives in this price range. The handles are comfortable, although the handle of the petty is a bit small for me. The biggest issue with these knives is the poor geometry. The blade grind is roughly half the height of the blade, which creates a bit of wedging and resistance when cutting. Thinning out the blade would fix this, but would ruin the appearance of the damascus. That said, they still perform better than the vast majority of knives people have used. I'd personally keep looking for something with better geometry.
