 Our "JCK Natures" house brand knives have proven to be some of JCK’s most popular knives. Each one of them has a unique appearance, fine characteristics and offers great value for money. Our JCK Natures Knives are a fusion of the craftsman’s special artistic techniques and the magnificent scenery of almighty nature.

 At end of the year 2019, we released the first models in the "Blue Clouds" series: a TsuchimeHammered Kiritsuke Petty and Kiritsuke in AUS-10. Since then, our Blue Clouds knives have become one of our Bestsellers because of the their overall quality, excellent fit & finish, moderate price and stylish, practical design.

 We have received many of positive comments about our Blue Clouds knives, including a special request to make a Carbon steel version of the Kiritsuke knives. Now, in the Spring of 2021, we are proud to introduce and finally release our newest Blue Clouds knives, which have Nashiji ("Pear skin") textured, Blue Steel No.2 blades and a beautiful, wavy forge weld line.

 The new "Blue Clouds Series" Blue Steel No.2 knives have a smooth Matt Blade Finish and Forged Nashiji texture — an innovative approach that produces very consistent and reliable results, especially when combined with the skilled hand work and finishing work performed by our smiths and craftsmen. The Mirror Polished, Blue No.2 Carbon Steel blade core is clad with low maintenance Stainless Steel and has a stylish, practical Kiritsuke blade shape (Similar to a multi-purpose Santoku or Bunka knife) that is well suited to a wide variety of cutting tasks. Heat treated to HRc. 61 to 62, the double bevel edged blade has a 50/50 symmetrical grind.

 The Polished, Vivid Blue Pakka Wood Handle Scales beautifully match the Nashij textured, Blue Steel No.2 Kiritsuke blade. These knives also feature a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets.

 The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.

 A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes. Please apply Tsubaki oil on the blade and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

      Elegant and Functional

      With the exception of being a little small in the hand (I am 6'2" with large hands), this blade is a joy to use. Although sharp out of the box, after a little time on the wet stones, it became wicked sharp and has maintained its edge.

      Under $100 and seems to be worth every dollar. I haven't used it a lot so we will see how it sharpens.

      This knife is the small-big knife, because the handle is comfortable for man and woman hand. The blade length is enough for ordinary kitchen tasks. The knife is very good balanced and owns all advantages of the High carbon steel-excellent sharpness, easy sharpening and these of the Stainless steel-rust resistance of the beautiful laminated blade. Unprotected parts of the blade (about 4-5 mm above of the cutting edge) must be cleaned, washed, dried...after use to keep in good working and aesthetically condition. To use this knife in kitchen is pleasure.
