 Our "JCK Natures" house brand knives have proven to be some of JCK’s most popular knives. Each one of them has a unique appearance, fine characteristics and offers great value for money. Our JCK Natures Knives are a fusion of the craftsman’s special artistic techniques and the magnificent scenery of almighty nature.

 At the end of the year 2019, after a long wait, we are finally introducing the new JCK Natures 青雲 "Blue Clouds" knives, which have just been finished. We are very excited to introduce these new products to you.

 The "Blue Clouds" knives have an impressive mirror polished blade with a Tsuchime Hammered Texture. The rust-resistant AUS-10 High Carbon Stainless Steel blade core is clad with Stainless Steel and has a stylish, practical Kiritsuke blade shape (Bunka), which is very similar to a multi-purpose Santoku or Bunka knife and is very capable of performing a wide variety of cutting tasks. Heat treated to HRc. 60-61, the double bevel edged blade has a 50/50 symmetrical grind.

 The Polished, Vivid Blue Pakka Wood Handle Scales beautifully match the mirror polished Kiritsuke blade, they are also strong and resist both water and shrinkage. The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.

 These knife features a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets.

 We especially recommend our JCK Natures "Blue Clouds" Knives to customers who are considering buying their first Japanese knife and want to own a moderately priced, high quality, practical, attractive and very fashionable knife.

 The Bunka is a general-purpose kitchen knife that used to be just as popular as the Santoku, but has become less commonplace in recent years. With its tall blade, the Bunka knife is particularly suitable for cutting vegetables or fruit and the triangular tip area is particularly useful for detailed work and cutting fish or meat.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.

  • Before starting to use the knife, please wash it with water for cleaning up.
  • Please do not put this knife in the dishwasher, please hand wash.
  • Please do not leave this knife in water or wet condition for long time.
  • After using, please hand wash it and wipe it clean and dry with soft clothes. (Includes bolster and handle part)
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, hard foods such as lobster and crab which have hard surface.
  • We recommend re-sharpening the knife using Japanese whetstones, when it gets dull.

    Good entry to Japanese knives

    The knife has very good fit and finish. The edge is evenly ground, slightly toothy. The handle and choil is smooth but the back of the knife is not rounded (as typical on Zwilling Japanese knives). I really like the Tsuchime finish, combined with the blue wood handle, and Kiritsuke tip, they make the knife look really expensive. The profile of the bevel is mostly flat and thick like a Western knife. The steel is kind of hard to get a keen edge on. On the plus side, I feel it can take more abuse than a high hardness thin knife.

    Very good knife, so far I love to use it. Good balance no more buying knife from korin anymore. JCK is good company knife.
