Master Hattori has used a new type of DuPont™ Corian®, called "Black Space", for the handle scales of these knives. It has a unique, beautiful appearance that reminds us of stars and asteroids in the blackness of space.

DuPont™ Corian® is a practical handle material that is very durable and water resistant. Master Hattori has carefully hand-contoured the handle and Stainless Steel bolster to provide a perfect, comfortable grip and superb blade balance.

After years of collaborative work with members of the "In the Kitchen" sub-forum at "Knife Forums" and the premier knife maker, Mr. Ichiro Hattori, we are proud to introduce our first JCK Original high-end Chef's knives: the "Hattori FH Series".

The Hattori FH Series is produced in very small batches to ensure the highest levels of product quality and performance. Every aspect of design and manufacture has been taken into consideration; from the ergonomics, geometry and balance of the blades and hand-contoured handles, to the special process used to heat treat the blades.

The blades of our FH Series knives are made from solid VG-10 Cobalt Steel (HRc. 60-61). At first glance these stainless steel blades might appear 'simple', but Master Hattori’s high level of craftsmanship and attention to detail is clearly visible if you carefully inspect their hand-sharpened edges and finely polished blades.

The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.  

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.  

We believe the quality and cutting performance of Japanese knives are the best in the world, and hope you enjoy fine craftsmanship and sharp edge with your new knife. With proper cares, every Japanese knife should be your special cooking partner for long times.

 

Important

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Master Hattori’s passionate apprentice, Mr. Nagatomo, concentrates continuously when he is handcrafting the perfectly shaped handles of the Hattori FH series knifes. Utilizing at least 10 different manufacturing steps and several pieces of equipment, I observed him carefully shape and contour the handle by hand. With each process, the handle is gradually refined until it reaches the perfect shape and finish. I felt all of these steps and processes were necessary. Indeed, it takes time to achieve the Hattori Quality.

    Great Knife

    The Hattori santuko knife I bought is beautiful: the fit and finish are flawless; and it is very, very sharp. To test its sharpness, I first sliced a ripe tomato easily in "paper-thin" slices. I then put a whole carrot on a cutting board, placed the very tip of the Hattori knife on the center of the side of the carrot, and held the handle at the very end with only the tips of two fingers so that only the weight of the knife was on the carrot. I then slowly pushed the knife forward, with the result that just as I reached the end of the blade, the knife completely cut through the carrot in just that one stroke. I then took a new, famous-maker, German santuko knife of the same length and roughly the same weight (though slightly lighter in weight) and did the same test with the carrot. The result this time was that it took eight (8) back and forth strokes the full length of the blade to completely cut through the carrot. I don't think anything more needs to be said.

    My first Hattori

    I love the fit and finish along with the aesthetics of the Corian handle it's a great blend of beauty and function. As far as the blade itself I found that I needed to strop it but after that it has been great my wife loves it more than me so I guess that is a sign to buy a few more for the collection!.
