After years of collaborative work with members of the "In the Kitchen" sub-forum at "Knife Forums" and the premier knife maker, Mr. Ichiro Hattori, we are proud to introduce our first JCK Original high-end Chef's knives: the "Hattori FH Series".
The Hattori FH Series is produced in very small batches to ensure the highest levels of product quality and performance. Every aspect of design and manufacture has been taken into consideration; from the ergonomics, geometry and balance of the blades and hand-contoured handles, to the special process used to heat treat the blades.
The blades of our FH Series knives are made from solid VG-10 Cobalt Steel (HRc. 60-61). At first glance these stainless steel blades might appear 'simple', but Master Hattori’s high level of craftsmanship and attention to detail is clearly visible if you carefully inspect their hand-sharpened edges and finely polished blades.
The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

I bought another western deba of the same Series "Black Space" Corian® Handle right after I received the gyuto. Both knives are highly recommend.
This is the best knife I have ever used
I have been meaning to finally expand and get a newer longer chef knife as I have had my Shun Premier 7" Santoku for about 12 years now, and this blew away my expectations. I consider the Shun a pretty solid knife that may be a little needy on the sharpening side, but this Hattori just blew it right out of the water with it's edge, weight, balance, and ergonomics for the pinch grip. Since I have obscenely large hands the stack height of the blade helps me not run my gorilla knuckles into the cutting board, and the weight at the tip makes it so agile and predictable. When I broke down some chicken wings for lunch (10 minutes after opening the box) it cut through the joints with no resistance at all, and was surprisingly easy to handle at 270mm of length. 10/10 would recommend this knife, I can't wait to have it for a while to really get to know all of it's characteristics, but I am not dissatisfied. It took me about a month to decide on this purchase because the knife wasn't "pretty enough" and after a realistic talk with myself about desiring function more than form, I pulled the trigger on the Hattori, and I would absolutely suggest doing the same if you're considering it.
I own multiple $1000 and up knives. This knife though much cheaper , I feel is the 2nd best in my collection.seconf only to a knife i inherited from my grandfather, dont even know the maker of the knife.I am a working chef and put my knives to use 12-20 hours a day 6 days a week. And this thing holds up, it comes wicked sharp , holds its edge , easy to maintain and its comfortable and has a super lively edge, its the only way i can think to describe it. My only regret is i didnt go for a larger version.
My wife is crazy about this knife! Can only recommend!!!
