Fujiwara Kanefusa FKM Knife is a basic utilitarian knife that is made from AUS-8 Molybdenum Vanadium stainless steel - A popular Japanese stainless steel with good cutting performance, rust resistance and ease of re-sharpening.

This knife has comfortable black pakkawood handles and a stainless steel bolster, which provides good blade balance and a fine grip.

This is the Stainless steel blade kitchen knife which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition. 

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for a long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in a dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    Very strong!!!

    knife with a very strong structure. Its handle is very ergonomic, but its edge is not very resistant. Excellent value for money, a knife suitable for a heavy workload that will have to be sharpened repeatedly if you want a good cut.

    Supremely Pleased!

    This blade was balanced, sharper than I expected (Probably the sharpest out of the box knife I’ve ever purchased), and performs it’s intended use of poultry work with absolute ease, as well as other tasks. My wife’s teasing about me buying a specialized chicken knife abruptly ended the first time she used this one! Outstanding quality and value for the price.

    Great knife

    I purchased this Fujiwara Kanefusa FKM No.4 Honesuki as a companion to my Fujiwara Kanefusa FKM Gyuto. It was a great addition. The knife arrived fast and was extremely sharp out of the box. The knife construction is strong and sturdy. It is also unexpectedly heavy and this helps to work with poultry and fishes quite a lot. The price is quite fair too. Completely satisfied with this knife.

    I love the product and company!

    I am left handed, and quality left handed knives are hard to find. I am so delighted with the left handed Honesuki and saya I bought, that I will be looking to replace some of my older right hand knives. Also, the JCK company and staff were extremely helpful and a pleasure the do business with.
