For your information, most of the Japanese Kitchen knives come originally with double bevel edge sharpened 70/30 (face side/back side) for Western style knives. This geometry came from Japanese Traditional knives with single bevel edge and Shinogi blade construction. This is one of the special features and reasons why Japanese knives have an excellent cutting performance.
However, this 70/30 edge geometry is designed for right hand use, so we have a service to modify it to 30/70 for left handed users with re-sharpening process by skilled craftsman.

I had the knife delivered to Tasmania, Australia with not problems whatsoever and it arrived within a week, which by itself was impressive. As for the knife, at this price point, I don't believe there is a better option in terms of value. The Sk4 steel might be abit more reactive for my liking, but it does not leave odours. The edge retention is great and the the edge straight from the box is satisfactory buy with a few strops on leather,. An absolutely razor edge can be achieved. knife profile of this santoku is my favorite part. Very easy to handle and with excellent knuckle clearance. Blade is nice and thin behind the edge too. Would rate the knife 4/5 but shipping is 5/5
