Using a high purity special stainless steel produced by a Swedish steel company, Misono has combined time-tested tradition techniques with new technological advances to create their ultimate line of stainless steel Chef's knives. The UX10 Series have exceptionally rust-resistant blades yet, just like high carbon steel knives, they offer extremely sharp edges and are easy to re-sharpen (HRc. 59-60). Perfect balance and grip is provided by using full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and a nickel silver bolster, which adds a stylish accent.

Misono craftsmen make extra hand sharpening steps by whetstone for all of UX10 Series knives. You can experience extreme sharpness and high cutting performance straight from the box!

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

Generally, Japanese kitchen knives are designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. Misono produces 100% left handed version with suitable blade grind angle and edge geometry from the beginning process.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition. 

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place. 
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Misono UX10, 130mm.

The knife is very excellent. Master's work is very beautiful. The knife cuts like a razor. But the handle has a smell of phenol resin. The smell becomes stronger after washing and remains on my hand. I need to wrap the handle with a napkin and work like this. I wash the knife a few times a day, but it doesn 't help. A professional knife should not have any smell. Please would you tell me what I should do with it. I want to buy one more, but I will wait.

Misono Knives !

Hello Koki, today I was sharpening my knives and finally I take some time to take a picture of them. So these are the three knives I bought from you. I'm very happy with all of them. The first one I bought was the petty knife. It's the most used one in our household. It's very practical and it's of ideal size for cutting common things like bread and vegetables. When it comes to cooking something bigger paring and santoku knives are the ones I go for. Paring for peeling and cleaning vegetables and santoku for cutting and chopping. Until I bought your knives I had only experience with european style of knives with thicker blades. These knives are heavier and the angle of the blades is bigger. When I got the petty knife I really liked it's lightness slim blade and the sharpness. After some time I bought a Misono Santoku knife and a paring knife. All these knives are very good for working with vegetables and this is really important for me since I'm a vegetarian. I also have a double sided Japanese whetstone to sharpen my knives. My experience is that in our household conditions it's enough to sharpen them approximately once a month. They stay sharp for a long time, they are dependable and very easy to use. Two of the knives I bought are made of carbon steel. I really like the patina they caught. I take care to always clean and dry my knifes immediately after use so I don't have any problems with rust. Misono ux10 is the kitchen workhorse!
