The KS Series is Masamoto’s range of high-grade Sweden Stainless Steel Japanese traditional-style knife. Masamoto KS Series Wa Gyuto is completely hand sharpened, polished and finished by especially skilled and experienced craftsmen, which results in extra edge sharpness and a more refined level of finish.
Masamoto KS Series knife uses a blade core of Sweden Stainless Steel (HRc. 59-60). This is the Stainless Steel Version of Masamoto's popular KS White Steel No.2 Wa Gyuto.
Each knife is fitted with a traditional Japanese ‘D-shaped’ magnolia wood handle with a water buffalo horn ferrule / collar and also includes a matching magnolia wood Saya (Sheath) for safekeeping.
The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

It's classic and elegant. It's such a beautiful knife.
Great fit and finish. Everything is done perfectly including the simple handle. Very light weight and comfortable to use. This low weight and simple yet effective design allows you to accurately perform cuts. I have yet to sharpen it on my water stones but it is reasonably sharp out of the box. I have only used it for a few tasks so I cant comment on the edge retention. At 467 USD for 240mm Sweden steel, Is it overpriced? perhaps. But JCKs price is cheaper then the competing vendors and shipping is fast and service is top notch. This knife is designed to be practical with no bells or whistles. I wish they would also offer different types of handles that have some water repelling coating for even more protection in a busy kitchen environment. Would I buy it again? probably yes. I like the feel it has in my hand as this knife has a character that is different then my other knives. Lets see how we get along in the future and I'll update my review.
It shouldn't be more than $350, so the price is a little steep as there are similar knives below $400, but the quick free/cheap shipping and amazing customer service justify the higher price for me. The steel is perfect for my needs - stainless, but also quite hard. The spine is super smooth and satisfying to touch - no sharp edges even though the knife is quite thin. The handle is light and smooth - works great for pointed finger grip and pinch grip. Personally I find pointed finger grip to be my preferred way to use the knife as the blade is quite long and I pointed finger gives me control, but pinch grip is also quite nice for using the closer 3/4 of the blade - just not the very end. 5/5
