 Ever since we first started to offer Kanetsugu knives to our customers, back in 2006, we have received many positive comments about Kanetsugu’s knives.  This year, Kanetsugu celebrates their 100th year in business. To celebrate this special anniversary, Kanetsugu have produced some beautiful and practical 'next-generation' R-2 Damascus Kiritsuke knives, which deliver an even higher level of cutting performance!

 Kiritsuke knives are becoming much more commonplace and popular amongst culinary professionals and Chefs because, similar to a multi-purpose Santoku or Bunka knife, they have a very capable blade shape that can perform a wide variety of cutting tasks.

 The Heptagonal (Seven-sided) Brown Pakka Wood Handle has a Black Pakka Wood Ferrule, a White Spacer and a decorative Mosaic Pin. This elegant, high-quality handle beautifully matches the stylish Kiritsuke blade shape and the overall design. Kanetsugu’s uses their own modern manufacturing technologies to create this practical, high-quality handle, which is water-resistant, crack-resistant and easy to clean.

 These new Kanetsugu ZUIUN knives stand out from other similar products for three reasons:

 Each ZUIUN R-2 Damascus Kiritsuke knife comes with a stylish ZUIUN Black Lacquered Wooden Saya and a Kiri (Paulownia) Wood Presentation Box.

 The long, narrow and dimples blade of slicer is particularly useful for slicing meat, boneless fish, roast beef and ham. The long blade allows the meat or fish to be cut in one single drawing motion, from heel to tip.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

        Bad @ss knife

        So this item was a gift for my boss, and he loves it he has commented several times how amazed he is by the quality and the sharpness. I have several knifes from JCK and I use them every chance I get and I clean them and put away gently and it has become a process that I thoroughly enjoy. People have no idea what they are missing when it comes to a quality sharp knife. It will blow your mind. From my several orders I have realized that they have impeccable customer service and are very fast to respond when I had a few dumb questions.         The Art of the knife.

        Since I started using Japanese knifes my admiration and respect for them is growing even more as well respecting others, but the traditional Japanese methods of old-world craftsmanship is incomparable and this knife is one tribute to that, amazingly sharp, beautiful design, unique presentation at a amazing price accompany with the super fast delivery of JCK as always delivering top of the class customer service.         I've used this knife everyday for the past 3 months in a professional setting. its great i love the look and shape. it's also easy to sharpen, which is great because you'll be doing that a lot. I like to hit it with a 6000 stone every/ every other day. also it holds its finish relatively well.
