After years of the collaborative work with the Knife Forums "In the Kitchen" members and the premier knife maker, Mr.Ichiro Hattori, we are proud to introduce our first JCK Original, FH Series Hattori / Forums high end Chef's knives.
Hattori FH Series knife is produced in very small batches to ensure a high level of quality and performance. Every detail in design and manufacture has been taken into consideration from the special heat treat process, to the hand contoured handle and to the balance, ergonomics and profile of each knife.
The blade is made of VG-10 Cobalt Steel (HRC60 to 61). Even though it is simple appearance, we can feel the Hattori’s detailed works high level of craftsmanship from finely hand sharpened and polished blade.
For the handle material, the Black Linen Micarta was chosen for durability with solid stainless steel bolster and rivets. Each handle is hand contoured to fit your hand comfortably, and the full tang is tapered down for the perfect weight balance.
The 'Western Deba’ is essentially a Western-styled variation of the traditional Japanese Deba knife that has a double bevel edge. It has a thick, heavy, and durable blade that is specially designed for the butchery of poultry, fish, and crustaceans such as shrimp, lobster, and crab - tasks that are not suited to the relatively thin blades of most Japanese knives. The heel portion of the Western Deba is capable of cutting through the small bones and cartilage of poultry and, when used with the correct technique, can safely be used to remove and split open the legs and claws of crabs.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

It arrived after 3 -4 days since ordering it. The knife was package with the Saya that I ordered with it. The knife was heavy at first but as you use it, the weight is never on your mind. Highly recommended.
This western style yo-deba is quite comfortable despite it's size and weight (if you prefer something more nimble than go with the smaller size) the handle is a little slimmer than most other deba knives which makes it easier wield for longer periods of time without too much fatigue.The spine of the blade is a little sharper than most (other spines are rounded out) and might take some time getting used to , if you like to rest your index finger on the back of the blade.I like the 50/50 taper of the double bevel edge which comes to a steeper angle edge whereas some other edges come flatter.The balance is nice and not overly forward, i like the fact that it is a solid VG-10 , on the harder side for a deba HRc 60-61 but great performance and rust resistant.Takes a good hit without chipping , the finish is clean and simple but made with purpose in design. Overall i like this deba for it's convenient maintenance and cutting peformance when compared to standard japanese deba knives which require more handling and care.

This FH series is superb! The fit and finish and the feel of the knife is just fantastic! The knife came razor sharp and I just love the design. For me the shape of the blade is perfect and for a deba it is the perfect thickness and weight. The linen micarta handle is also perfect.
