This “New Concept” knife features a distinctive ‘upswept handle’ and an R-2 Powdered Metallurgy High Speed Tool Steel Custom Damascus bade that has a unique ‘random pattern’ Damascus that Master Saji calls “Diamond Damascus”. It is handcrafted using a complex series of forging processes and a specially formulated acid etching and polishing that, in combination, produce a unique Damascus blade that has a sparkling diamond pattern and an uneven surface texture.
The polished, slanted stainless steel bolster is a distinctive design element that not only gives an impression of ‘forward movement’ and ‘agility’, but also improves blade balance and the durability of the handle. The perfectly contoured Desert Ironwood Handle Scales that have a rich warm color and dramatic figuring.
The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
This is a wonderful knife by Takeshi Saji, and the particular one JCK sent me was very good, no problems. Well packaged, blade in nice condition, ironwood handle smooth and beautifully grained, and even had a well done decorative mosaic pin in the handle which was not presented in the pictures. Normally the pictures should be accurate, but I was very pleased with that positive surprise. JCK also modified a saya to fit this unique knife shape upon purchase. Much appreciated. This angled gyuto concept indeed looks different, even perhaps awkward, but it is quite functional and I enjoy the difference in form. The textured "diamond" Damascus finish is beautiful and very pleasing both to the eye and the fingertips. The total package is exquisite - any chef even of the highest caliber would be proud to use such a knife. The only noted flaw I could possibly detect, is that Master Saji seemed to have very slightly mis-chiseled some of his name. But it's reasonable and bound to occur at some time!
