Serrated bread knives were invented for the sole purpose of cutting soft bread and baked goods without crushing them. However, depending on the type of serration, they can also be used to cut other foods including tomatoes, cucumbers, melons, and even preserved meats, such as salami. For this reason, many culinary professionals consider the humble bread knife an essential part of their kit.

Generally, Japanese kitchen knives are designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. Misono produces 100% left handed version with suitable blade grind angle and edge geometry from the beginning process.

We believe quality and performance of Japanese knives are best in the world and hope you enjoy the fine craftsmanship and spirits from your new knife. With proper cares, every Japanese knife can be your special cooking partner for a long time.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for a long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in a dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.

  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Great bread knife and so much more

I bought this knife to replace an older breadknife. While being simple and unassuming in design, it’s beautifully made and of very high quality. It cuts through bread like butter and I can make slices as thin as I like with full control. I’ve also started using this knife for other purposes. Right now, I use it to cut paper thin slices from my whole bone-in Serrano ham. The knife is flexible enough and sharp to allow very thin slicing.. Normally, a serrated knife doesn’t work so well on fine grained meats, but this knife is sharp enough to ignore that limitation, and even the fatty and more tender portions of the ham cut without tearing. This knife has been a great addition to my knife set, and I heartily recommend it to anyone looking for a great bread knife +
